EASY SWEET AND SOUR PORK CHOPS

Easy Sweet and Sour Pork Chops image

Being a busy single mom, I look for recipes that are quick, simple and don't have 100 ingredients. This one fits the bill to a T. I've served it to my picky parents and sisters who loved it and my 6 year old always asks for seconds (and even thirds at times)! Original recpie called for equal parts of wet ingredients, but I found it too salty and reduce the soy sauce slightly.

Time 30m

Yield 4 servings

Number Of Ingredients 11

8 1/2-inch-thick loin rib pork chops, about 2 3/4 pounds (see note)
Salt to taste if desired
Freshly ground pepper to taste
2 cooking apples such as Granny Smiths, about 1 pound
1/4 cup flour
2 tablespoons corn, peanut or vegetable oil
2 tablespoons finely chopped shallots
2 tablespoons red-wine vinegar
3/4 cup fresh or canned chicken broth

Tips:

  • For best results, use a thick cut pork chop, at least 1 inch thick.
  • Tenderize the pork chops before cooking to help break down the fibers and make them more tender.
  • Use a flavorful marinade to add extra flavor to the pork chops. Yogurt, buttermilk, and Italian dressing are all good options.
  • Cook the pork chops over medium heat to ensure that they cook evenly throughout.
  • Do not overcook the pork chops, or they will become dry and tough. Cook them until they reach an internal temperature of 145 degrees Fahrenheit.
  • Let the pork chops rest for a few minutes before serving to allow the juices to redistribute.
