This simple, creamy, and satisfying vegetarian soup is from the excellent new cookbook, "The Great Big Veg Challenge: How to Get Your Children Eating Vegetables Happily", by Charlotte Hume. Tips:

  • Use fresh edamame: Fresh edamame is sweeter and has a more vibrant flavor than frozen edamame. If you can find it, use fresh edamame for the best results.
  • Don't overcook the edamame: Edamame should be cooked until it is bright green and tender, but not mushy. Overcooked edamame will lose its flavor and texture.
  • Use a variety of vegetables: This recipe is a great way to use up leftover vegetables. Feel free to add any vegetables that you like, such as carrots, celery, or mushrooms.
  • Make it spicy: If you like spicy food, add a teaspoon or two of chili powder or red pepper flakes to the soup.
  • Serve with rice or noodles: This soup is delicious served with rice or noodles. It's also a great meal to serve with a side salad.
