QUICK SAVORY CRANBERRY GLAZED PORK LOIN ROAST

Quick Savory Cranberry Glazed Pork Loin Roast image

This simple, 1-hour roast is our favorite Christmas dish and voted most likely to be served if the President were to drop in for dinner- LOL! I love serving this entree because it causes me NO stress and everyone raves over it. While the pork is roasting, make another batch of the cranberry glaze to serve in a gravy boat alongside the sliced pork roast. For food safety, the new batch should not be prepared in same pan as the first if you have been basting directly out of the saucepan. If you basted out of another dish, you can use the same pan.

Looking for a hearty dinner ready in less than 30 minutes? Glazed with jewel-toned cranberry sauce and orange marmalade kicked up with ginger and red pepper flakes, these pork chops taste as good as they look. Serve with your favorite side dishes for a weeknight meal that's anything but ordinary.

Provided by Chris Salicrup

Categories     Dinner

Time 25m

Yield 4 servings

Number Of Ingredients 10

1 cup cranberry sauce
¼ cup orange marmalade
2 teaspoons extra virgin olive oil
1 teaspoon fresh ginger, grated
½ teaspoon red pepper flakes
2 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
4 bones in pork chops
2 tablespoons canola oil
1 tablespoon fresh parsley, chopped, for garnish

Steps:

  • Preheat the oven to 350°F (180°C).
  • In a medium bowl, mix together the cranberry sauce, orange marmalade, olive oil, ginger, red pepper flakes, 1 teaspoon of salt, and ½ teaspoon of pepper. Set aside.
  • Season the pork chops on both sides with the remaining teaspoon of salt and ½ teaspoon of pepper.
  • Heat the canola oil in a large cast-iron skillet over medium-high heat. When the oil is shimmering, sear the pork chops in batches until golden brown on both sides, about 2 minutes per side. Sear the fat side of the pork chops until lightly browned and some of the fat has rendered, about 1 minute more.
  • Turn off the heat then arrange all of the pork chops in the pan. Spoon the cranberry mixture over the chops, spreading in an even layer.
  • Transfer the pan to the oven and bake for 5-7 minutes, or until the internal temperature reaches 140°F (60°C). Let rest for 5 minutes.
  • Transfer the pork chops to plates and garnish with the parsley. Serve with your favorite sides.
  • Enjoy!

Tips:

  • Use a quality cut of pork. A good pork roast will have a nice layer of fat and be well-marbled. This will help to keep the meat moist and flavorful during cooking.
  • Don't overcook the pork. Pork is best cooked to an internal temperature of 145 degrees Fahrenheit. Overcooking will dry out the meat and make it tough.
  • Make sure the glaze is thick and sticky. The glaze should be thick enough to coat the pork evenly and should be sticky enough to stay in place. If the glaze is too thin, it will run off the pork and not adhere to it.
  • Let the pork rest before carving. Once the pork is cooked, let it rest for 10-15 minutes before carving. This will help the juices to redistribute throughout the meat and will make it easier to carve.
  • Serve the pork with your favorite sides. Pork roast pairs well with a variety of sides, such as mashed potatoes, roasted vegetables, and cranberry sauce.

Conclusion:

Pork roast with cranberry glaze is a classic dish that is perfect for any special occasion. It is easy to make and always a crowd-pleaser. With its tender and juicy meat, flavorful glaze, and festive presentation, this dish is sure to be a hit. So next time you are looking for a delicious and impressive main course, give pork roast with cranberry glaze a try. You won't be disappointed!
