Pork sausage hominy is a Southern dish that combines the savory flavors of pork sausage and hominy. This traditional one-pot meal is easy to make and can be tailored to your own personal taste. Hominy, made from dried corn kernels that have been treated with an alkali solution, has a chewy texture and a mild flavor that pairs well with the smokiness of pork sausage. The dish is often served with other Southern favorites like collard greens, black-eyed peas, and cornbread.

JOLEAN'S HOMINY AND SAUSAGE

Jolean's Hominy and Sausage image

This was one of those staple meals that Mom came up with when funds were low...It's just simple, cheap, comort food and it's the only way my siblings and I would ever eat hominy...I still love it! (NOTE: I add 1 tsp. parsley flakes to it when I season with salt & pepper, but that's not part of the original recipe...AND, I prefer to use Sage flavored sausage.)

Provided by Stacky5

Categories     One Dish Meal

Time 25m

Yield 6-8 serving(s)

Number Of Ingredients 6

1 lb ground sausage (Maple flavor or Sage flavor, according to your preference)
1/2 onion, finely diced
1/2 tablespoon minced garlic
2 (14 1/2 ounce) cans yellow hominy, drained (or white)
1 tablespoon butter
salt & pepper

Steps:

  • In a large skillet, brown the sausage and cut into chunks. Remove sausage and drain grease but leave drippings in the pan.
  • Saute onion and garlic in butter in the same pan with the sausage drippings. Add hominy and cook over medium heat stirring frequently, until heated through. Sprinkle with salt & pepper to taste.
  • Add sausage back to the skillet for about 5-10 minutes, stirring frequently until heated through.
  • Serve with big, fluffy biscuits with butter and honey! YUM!
  • Oh, just a NOTE: My brother and my Dad always mixed in some catsup with theirs -- I used to put some on the side and dip the sausage into it -- Mom didn't care much for that when we added catsup, though! LOL!

Tips:

  • Choose the right hominy: Canned hominy is a convenient option, but dried hominy offers a more authentic flavor and texture. If using dried hominy, be sure to soak it overnight before cooking.
  • Use a variety of pork sausage: Different types of pork sausage can impart different flavors to the dish. Try using a spicy sausage for a kick of heat, or a mild sausage for a more subdued flavor.
  • Don't overcrowd the pan: When browning the pork sausage, be sure to do it in batches so that the sausage doesn't steam instead of brown.
  • Simmer the hominy and sausage until tender: The hominy and sausage should be simmered together for at least 30 minutes, or until the hominy is tender and the sausage is cooked through.
  • Season to taste: Be sure to taste the dish before serving and add additional salt, pepper, or other seasonings as desired.
  • Serve with your favorite toppings: Pork sausage and hominy can be served with a variety of toppings, such as shredded cheese, diced avocado, or salsa.

Conclusion:

Pork sausage and hominy is a simple but flavorful dish that is perfect for a weeknight meal. It is easy to make and can be tailored to your own taste preferences. Whether you like your sausage spicy or mild, this dish is sure to please. So next time you're looking for a quick and easy meal, give pork sausage and hominy a try.
