2 medium onions, sliced and separated into rings
1 garlic clove, minced
1 tablespoon canola oil
1 can (14-1/2 ounces) beef broth
1 each medium sweet red, yellow and green pepper, julienned
1/4 cup tomato paste
1/4 cup salsa
1 to 2 teaspoons chili powder
1/2 teaspoons salt
3 tablespoons all-purpose flour
1/4 cup cold water
Hot cooked rice

Steps:

  • In a large skillet, stir-fry the pork, onions and garlic in oil for 3 minutes. Stir in the broth, peppers, tomato paste, salsa, chili powder and salt. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until pork is no longer pink, stirring occasionally., Combine the flour and water until smooth; gradually add to pan. 2 leeks, white and light green parts thinly sliced
1/2 cup each finely chopped green, red and yellow bell peppers
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1 boneless pork loin roast (2 lb.), butterflied
1/2 tsp. black pepper

Steps:

  • Heat oven to 350ºF.
  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towel. Add leeks and bell peppers to drippings in skillet; cook and stir 6 to 8 min. or until crisp-tender. Transfer mixture to medium bowl; refrigerate 10 min.
  • Add cream cheese and bacon to leek mixture; mix well. Open meat; place, cut-side up, on work surface. Spread cream cheese mixture onto meat to within 1/2 inch of edges. Starting at 1 long side, roll up meat; tie closed with kitchen string. Place in baking dish; sprinkle with black pepper.
  • Bake 1 hour or until meat is done (145ºF). Let stand 10 min. before slicing.

  • In a small bowl, combine 2 teaspoons cornstarch and sugar. Stir in 2 tablespoons soy sauce, sherry or broth, additional broth, 1 teaspoon sesame oil and hot pepper sauce until smooth; set aside. , In another bowl, combine the remaining cornstarch, soy sauce and sesame oil until smooth. Transfer to a large resealable plastic bag; add beef. Turn gently to coat; cover and refrigerate for 1 hour., Drain and discard marinade. 2 tablespoons green olives or 2 tablespoons vegetable oil
1 1/2 lbs pork blade steaks, Pork Steaks should be cut 1/2 inch thick. There should be 4 to 5 of
1 pepper (3 Total;There should be 1 Med Pepper of Red, Green and Yellow Sweet Peppers)
1 clove garlic, finely chopped
1 medium tomatoes, Coarsely Chopped
1 envelope onion soup mix
1 cup water
1/2 teaspoon thyme leaves
1/8 teaspoon pepper

Steps:

  • In large skillet, heat oil and brown steaks over medium-high heat.
  • Remove steaks.
  • Reduce heat to medium, into skillet, add peppers and garlic and cook 5 minutes or until peppers are crisp tender.
  • Stir in tomato, then onion soup mix blended with water, thyme and pepper.
  • Bring to a boil.
  • Return steaks to skillet and simmer, uncovered, stirring sauce occasionally 25 minutes or until steaks and vegetables are tender.

4 large cloves garlic, peeled
1 ½ teaspoons coarse salt
2 tablespoons olive oil
1 tablespoon whole black peppercorns
2 pounds pork tenderloin, cut into 1 inch medallions
2 red bell peppers, julienned
1 cup white wine
2 lemons

Steps:

  • With a large mortar and pestle, mash the garlic, coarse salt, 1 tablespoon olive oil, and peppercorns into a fine paste. Transfer to a large bowl.
  • With a mallet, flatten the pork medallions to 1/4 inch thick. Place in the bowl with the garlic mixture, tossing to coat. Cover, and marinate 2 to 4 hours in the refrigerator.
  • Heat the remaining oil in a large skillet over high heat. Stir in the pork and remaining garlic mixture. Quickly brown pork about 1 minute on each side. Remove from heat, and set aside.
  • Place red peppers into the skillet, and saute 2 to 5 minutes, until tender but firm. Pour white wine into the skillet, and scrape up the browned bits. Reduce heat to low, return pork to skillet, and continue cooking 10 to 15 minutes, to an internal temperature of 180 degrees F (80 degrees C).
  • Slice 1 1/2 lemons into thin rounds. Transfer the pork and pepper mixture to a serving platter. Squeeze juice of remaining 1/2 lemon over the pork and peppers, and garnish with the lemon rounds.

1 clove garlic, minced (I used 2!)
1 tablespoon canola oil

12 ounces tiny new potatoes
8 ounces pork tenderloin
2 teaspoons olive oil
8 ounces whole onion or 7 ounces ready-cut julienned onion (1 2/3 cups)
16 ounces whole green and red peppers or 14 ounces ready-cut julienned peppers (4 cups)
2 tablespoons balsamic vinegar
1/4 teaspoon salt

Steps:

  • Scrub potatoes, but do not peel. Cover with water, and boil in a covered pot, about 20 minutes.
  • Cut pork into 4 equal pieces. Heat one teaspoon of the oil in a nonstick pan, and brown the pork on all sides.
  • Cut whole onions and peppers into eighths. Slice in food processor. When pork is browned, set aside. Add remaining oil to pan, and cook onions and peppers over medium-high heat until they soften, about 5 minutes.
  • Stir in vinegar and pork, and cook another minute or two.
  • Drain potatoes and place in shallow serving dish; mash coarsely and season with salt; spoon in the pork and vegetables.

1 1/2 teaspoons smoked Spanish paprika
Salt and ground black pepper
2 ounces smoked slab bacon, diced
1 boneless pork loin, about 1 1/2 pounds, cut in half
1 red bell pepper, cored, seeded and slivered
1 green bell pepper, cored, seeded and slivered
1 medium-size onion, peeled and slivered
4 large cloves garlic, peeled and slivered
1 teaspoon dried marjoram
2 cups canned chickpeas, rinsed
1 cup chicken stock
1 tablespoon sherry vinegar

Steps:

  • Mix 1 teaspoon paprika with salt and pepper to taste and rub all over meat. Set aside. Place bacon in a 3- to 4-quart casserole over medium-high heat and sizzle until lightly browned. Remove. Place pork in casserole and briefly brown on all sides. Remove.
  • Reduce heat to low. Add peppers, onion and garlic and sauté until soft. Return bacon to pan, add remaining 1/2 teaspoon paprika and cook, stirring, for a minute. Stir in marjoram, chickpeas and stock. Simmer, covered, about 30 minutes, until sauce has reduced and intensified. Stir in vinegar. Put pork in casserole, baste with sauce, cover and cook about 20 minutes, until done just shy of medium (an instant-read thermometer should register 130 degrees in the center of the meat; the temperature will increase as the meat rests).
  • Remove pan from heat and season with salt and pepper. Leave casserole covered for 10 minutes. To serve, slice meat in medallions about ½-inch thick, arrange on a platter and spoon sauce around meat.

This pork belly dish is less a recipe and more a road map to dinner. A chill way to have Korean barbecue at home, samgyeopsal, or "three-layer meat," refers to pork belly's fat cap and the two leaner layers of meat below it, one light and one dark. Crisp slivers of pork are wrapped in various lettuces and dabbed with doenjang honey and punchy slivers of raw garlic. The lightly peppered, vinegared freshness of pa muchim, an all-occasion scallion salad often served with the grilled meats at Korean barbecue restaurants, is a welcome accompaniment to rich foods like fried or rotisserie-style chickens, pan-seared pork chops, and grilled bulgogi, galbi and samgyeopsal. Don't skip the sesame oil dipping sauce; its nuttiness lets the pork belly shine.

4 scallions, trimmed, cut into 3-inch segments, then very thinly sliced lengthwise into matchsticks
1 tablespoon rice vinegar
2 teaspoons gochugaru
1 teaspoon toasted sesame oil
Pinch of granulated sugar
Coarse kosher salt and freshly ground black pepper
1 pound assorted lettuces, such as Little Gem, endive and perilla, leaves separated
4 garlic cloves
2 tablespoons doenjang
1 tablespoon honey
Coarse kosher salt and freshly ground black pepper
4 tablespoons toasted sesame oil
2 pounds thinly sliced pork belly, cut into 2-inch strips (see Tip)

Steps:

  • Make the pa muchim: In a medium bowl, toss to combine the scallions, vinegar, gochugaru, sesame oil and sugar. Season to taste with salt and pepper; set aside.
  • Prepare the samgyeopsal spread: Wash and dry the lettuces and arrange on a large platter. Thinly slice the garlic cloves and place on a small plate, scooching the slices to one side. Make the doenjang honey by dabbing the doenjang onto the other side of the plate and drizzling the honey over the doenjang. Make the dipping sauce by adding 1 teaspoon salt and a generous grind of black pepper to 4 small dishes (or however many are dining); drizzle each dish with 1 tablespoon sesame oil.
  • Cook the pork belly: Heat a large skillet over medium-high. Add half of the pork belly and cook, stirring occasionally, until the edges are crispy and lightly browned but the centers are still plump and meaty, 5 to 7 minutes. Transfer to a towel-lined platter. Drain the fat from the pan and discard. Repeat with the remaining pork belly. Serve immediately with bowls of fresh white rice.
  • To eat, dip the fried pork belly into the dipping sauce, then place on a lettuce leaf. Smear some of the doenjang honey onto the pork belly, top with a slice of raw garlic and a small chopstickful of pa muchim. Fold the lettuce wrap into a bundle and eat. Chase with the white rice. Another lovely thing to do: Dip the lettuces into the doenjang honey or dipping sauce, and eat them like crudités between bites of crispy pork belly.
