2 tbsp light soy sauce ((Note 1))
3 tbsp rice vinegar ((aka rice wine vinegar, or use cider vinegar))
1 tbsp sesame oil (toasted)
2 tbsp grapeseed oil ((or canola or any other neutral flavored oil))
1 tsp sugar
1 1/2 tsp fresh ginger (, grated or very finely chopped)
1 garlic clove (, minced)
1/2 tsp black pepper
4 cups Chinese cabbage ((Nappa Cabbage), finely shredded (Note 2))
1 1/2 cups red cabbage (, finely shredded)
1 cup carrot (, finely julienned (see video))
2 cups chicken (, shredded)
1/2 cup shallots / scallions (, finely sliced on the diagonal)
1/2 to 1 cup crunchy noodles ((I use Chang's) (Note 3))
1 - 2 tsp sesame seeds

Steps:

  • Combine the Dressing ingredients in a jar and shake. Set aside for 10 minutes or so for the flavours to meld.
  • Place the Salad ingredients together in a large bowl along with half the crunchy noodles. Drizzle over dressing then toss. (Note 4)
  • Divide between serving bowls. Top with more crunchy noodles and a good sprinkle of sesame seeds. Serve immediately!

½ cup blanched slivered almonds
½ cup corn oil
½ cup rice garlic vinegar
1 packet artificial sweetener

Steps:

  • Saute chicken in a large skillet until well browned. Place coleslaw in a large bowl, add chicken and set aside (or refrigerate if not serving soon).
  • Break up ramen noodles into a small bowl; add almonds and set aside.
  • In a small bowl combine the corn oil, vinegar, ramen seasoning packets and artificial sweetener. Mix well and set aside until ready to serve.

4 tablespoons low sodium soy sauce, divided
2 teaspoons toasted sesame oil, divided
1 lb boneless skinless chicken breast
1/2 head napa cabbage, thinly shredded (about 6 cups)
1/4 head red cabbage, shredded (about 2 cups)
1 large carrot, shredded (about 2 cups)
3 scallions, trimmed and thinly sliced, greens included (about 1/2 cup)
1 (8 ounce) can sliced water chestnuts
1 (11 ounce) can mandarin oranges, in water, drained
1/3 cup rice wine vinegar
1 teaspoon minced garlic
1 teaspoon minced ginger
2 tablespoons canola oil
2 tablespoons brown sugar
1 1/2 teaspoons chili-garlic sauce or 1 1/2 teaspoons chili sauce
1/4 cup sliced almonds, toasted

Steps:

  • Preheat oven to 350 degrees F.
  • Combine 1 tablespoon soy sauce and 1/2 teaspoon sesame oil and brush onto chicken breasts. Arrange in a baking dish and bake until juices run clear, about 13 to15 minutes. Remove from oven, cool completely, and cut into 1/4-inch slices.

1 head iceberg lettuce
1 red pepper, thinly sliced
1 green pepper, thinly sliced
1/4 cup scallion, chopped
1/4 cup cilantro, minced
1/2 cup bean sprouts, rinsed and trimmed
2 chicken breasts, grilled or poached,then shredded
1/2 cup olive oil
1/2 teaspoon red pepper flakes
1 tablespoon no-sugar-added peanut butter
1/4 cup sesame oil
1 tablespoon sugar
1/4 cup rice vinegar
1/4 cup soy sauce
1 tablespoon fresh ginger, minced (I used a Microplane Zester)
1 tablespoon fresh garlic, minced (I just smash mine with the broad edge of my chef's knife)
