1 cup brown basmati rice
1 cup unsweetened coconut milk (divided)
1/3 cup fresh cilantro, chopped (may add 1/2 cup if you really like cilantro!)
1/8 cup fresh parsley, chopped
4 teaspoons fresh ginger, finely minced (divided)
2 garlic cloves, minced (divided)
1 tablespoon lime juice
1 lb portabella mushroom, cut in 1/2 inch slices
2 tablespoons olive oil
1/2 cup green onion, sliced
2 teaspoons Madras curry powder
1/8 teaspoon crushed red pepper flakes
1 cup cherry tomatoes, quartered (or use a regular tomato, chopped to equal 1 cup)
2 tablespoons coarsely chopped roasted cashews (or peanuts)

Steps:

  • In a medium saucepan mix rice, 2 cups water, and 1/2 teaspoon salt. Bring to boiling; reduce heat. Simmer, covered, 15 to 20 minutes or until rice is tender and liquid is absorbed.
  • Meanwhile, in a blender or food processor mix 1/2 cup of the coconut milk, cilantro, parsley, 1 teaspoon of the fresh ginger, 1 garlic clove, and the lime juice. Cover; blend or process until nearly smooth. Stir into rice. Cover; keep warm.
  • In 12-inch skillet cook mushrooms in hot oil over medium heat for 5 minutes; turning occasionally.
  • Add green onions, curry powder, red pepper flakes, and remaining ginger and garlic. Cook and stir 1 minute.
  • Stir in tomatoes and remaining coconut milk. Heat through. Season to taste with salt and black pepper.
  • To serve, divide rice among 4 plates. Top with mushroom mixture and sprinkle with nuts. Enjoy!
  • Makes 4 servings.

WILD MUSHROOM RICE

4 tablespoons unsalted butter
3 tablespoons olive oil
1/2 pound shiitake mushrooms, stems removed and caps cut 1/4-inch thick
2 large portobello mushrooms, stems removed and caps cut 1/4-inch thick
1/2 pound oyster mushrooms, stems removed and caps cut 1/4-inch thick
Salt and pepper, to taste
1 Spanish onion, finely chopped
3 cups converted rice
7 cups chicken stock
1 teaspoon salt
1/4 cup porcini mushroom powder

Steps:

  • Heat 3 tablespoons butter and 2 tablespoons oil in a large saute pan over high heat. Add the mushrooms, season with salt and pepper to taste and saute until golden brown. In a medium saucepan heat remaining oil and butter over medium heat, add the onions and cook until soft. Add the rice and stir to coat with the butter and oil. Add 6 cups of the stock, 1 teaspoon of salt and the porcini powder, bring to a boil, cover, lower the heat and cook until all the liquid is absorbed. Fold in the mushroom mixture, more stock if needed and season with salt and pepper to taste, cook to heat through, 5 minutes.

2 ounces uncooked multigrain angel hair pasta, broken into 1- to 2-inch pieces
2 large eggs, lightly beaten
1 tablespoon canola oil
1 yellow summer squash, sliced
1 small sweet red pepper, chopped
2 garlic cloves, minced
2 teaspoons curry powder
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1 package (8-1/2 ounces) ready-to-serve basmati rice
2 tablespoons reduced-sodium soy sauce
1 tablespoon lime juice
1 teaspoon sesame oil
2 green onions, thinly sliced
1/2 cup chopped cashews

Steps:

  • In a small saucepan, cook pasta according to package directions; drain and cool., Meanwhile, place a large nonstick skillet coated with cooking spray over medium heat. Pour in eggs; cook and stir until eggs are thickened and no liquid egg remains. Remove from pan., In same skillet, heat canola oil over medium-high heat. Add squash, red pepper and garlic; stir-fry 2-3 minutes or until squash is crisp-tender. Stir in curry powder, ginger and pepper flakes. Add rice and pasta; drizzle with soy sauce, lime juice and sesame oil. Heat through, tossing to combine. Stir in green onions, cashews and cooked eggs.
