1 (8 ounce) can sliced pineapple, drained and juice reserved
1 tablespoon brown sugar
1 (12 ounce) can SPAM® with Bacon, sliced 1/4-inch thick
4 large eggs
2 bagels, split
½ avocado - peeled, pitted, and mashed
1 tomato, sliced 1/4-inch thick
¼ teaspoon balsamic vinegar

Steps:

  • Place pineapple slices in a non-stick skillet over low heat; sprinkle with brown sugar. Cook pineapple, shaking the pan every minute, until bottom of pineapple rings turn golden and sugar is caramelized, about 5 minutes; remove slices from pan and set aside.
  • Place SPAM® with Bacon slices into the same skillet and pour 1/4 cup of reserved pineapple juice over the SPAM® with Bacon; cook until juice evaporates, about 3 minutes. Flip SPAM® with Bacon; pour remaining pineapple juice in and cook until evaporated, about 3 minutes more.
  • Crack eggs into a nonstick skillet over medium-low heat; cook until whites are firm and yolks are done to your liking.

1 bagel (flavor of your choice- I prefer Everything or Egg bagels)
1 egg
1 slice cheese (flavor of your choice- I prefer American)
2 pieces deli ham (any breakfast meat) or 2 pieces Canadian bacon (any breakfast meat)
1 tablespoon butter

Steps:

  • Place bagel in toaster and toast as desired.
  • Over medium heat, fry egg in frying pan.
  • Turn off heat but, leave pan on burner.
  • Place meat on top of egg and then the cheese on top of the meat.
  • Cover with a lid and let the heat melt the cheese.
  • Butter toasted bagel.
  • Place egg, meat, and cheese pile on one half of bagel and top with the other half.
  • Slice in half and enjoy!

4 tablespoons salted butter
1/4 cup half-and-half
3 large eggs, beaten
Kosher salt and freshly ground black pepper
4 precooked sausage patties, such as Jimmy Dean
4 mini bagels, split
1/4 cup bottled chipotle mayonnaise
2 slices American cheese, split
2 slices pepper jack cheese, split
1 small tomato, sliced thin
1 small avocado, sliced
1 tablespoon everything seasoning

Steps:

  • Heat a griddle over medium heat.
  • Melt 2 tablespoons of the butter in a nonstick skillet over medium-low heat. Mix the half-and-half, eggs and a good pinch of salt and pepper in a measuring cup. Gently pour the mixture into the skillet. Turn the heat to low, cover and wait until the eggs are set, 4 to 5 minutes.
  • While the eggs cook, add the sausage patties to one half of the griddle and cook until heated through, about 2 minutes per side. Grease the other half of the griddle with the remaining 2 tablespoons butter. Add the bagels, cut-side down, and toast until golden, 1 to 2 minutes. Remove the bagels and sausage to a board.
