Number Of Ingredients 10

1 pound potatoes, thinly sliced
1 cup sliced onion
2 ½ cups chicken broth
½ cup milk
1 cup fresh sliced mushrooms
½ cup red bell pepper, diced
½ cup chopped green onions
1 cup freshly grated Asiago cheese
salt and pepper to taste
2 tablespoons chopped fresh parsley

Steps:

  • In 3 quart saucepan, combine potatoes, onions and broth. Bring to a boil, reduce heat to low and cook for 10 minutes or until potatoes are tender.
  • Transfer soup to a blender and puree. Return blended soup to saucepan and stir in milk, mushrooms, bell pepper and green onions.
  • Simmer over medium-low heat and add cheese, a few tablespoons at a time, continually stirring to ensure it melts. Season with salt and pepper, sprinkle with parsley and serve.

3 medium potatoes (about 1 pound), peeled and quartered
1 small onion, finely chopped
1 cup water
1 teaspoon salt
3 cups whole milk
3 tablespoons butter, melted
2 tablespoons all-purpose flour
2 tablespoons minced fresh parsley
1/8 teaspoon white pepper
1 cup shredded Swiss cheese

Steps:

  • In a large saucepan, bring potatoes, onion, water and salt to a boil. Reduce heat; cover and simmer until potatoes are tender. Do not drain; mash slightly. Stir in milk. , Meanwhile, in a small bowl, blend the butter, flour, parsley and pepper; stir into the potato mixture. Cook and stir over medium heat until thickened and bubbly. 1 cup finely chopped carrot
1/2 cup finely chopped celery
1/4 cup flour
1/4 teaspoon salt
1 1/2 cups shredded American cheese
1/2 cup finely chopped onion
2 tablespoons butter
1 cup chicken broth
2 cups light cream or 2 cups milk

Steps:

  • Saute vegetables in butter until tender.
  • Stir in flour and salt.
  • Add broth.
  • Cook until thickened.
  • Stir in cream/milk and cheese over low heat until cheese melts.

BEAN MIX:
1-1/2 cups each dried lentils, baby lima beans, yellow split peas, red kidney beans, great northern beans, pinto beans, green split peas and navy beans
ADDITIONAL INGREDIENTS (for each batch):
2-1/4 quarts water
2 cups cubed fully cooked ham
1 can (14-1/2 ounces) stewed tomatoes
1 medium onion, sliced
1 medium green pepper, chopped
1 garlic clove, minced
2 teaspoons salt
1 teaspoon each dried marjoram, oregano, parsley flakes and Italian seasoning

Steps:

  • In a large bowl, combine beans; divide into six batches (2 cups each). Store in airtight containers. Yield: 6 batches (12 cups total)., To prepare soup: Place one batch of bean mix in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. I searched high and low for a basic potato cheese soup that my kids would eat (that means not many veggies!). This is it. So good and cheesy!

3 tablespoons butter
1 medium onion, diced
1 large garlic clove
6 potatoes, peeled and diced
3 cups water
2 cups milk
2 cups grated cheddar cheese
salt and pepper

Steps:

  • Melt the butter in a large pot.
  • Fry onions for 3 minutes (don't let brown).
  • Add garlic and continue to sauté for 1-2 minutes.
  • Add the potatoes and water.
  • Bring to a boil; reduce heat and simmer until the potatoes are very tender.
  • Mash potatoes until at desired consistency. Or use a hand blender. I like mine left with some chunks.
  • Add milk and salt and pepper to taste.
  • Cook over medium heat until milk begins to simmer.
  • Add the cheese and stir until it melts.
  • Do not boil!
