Time 1h30m

Yield 12 servings

Number Of Ingredients 11

6 tablespoons unsalted butter
1/3 cup all-purpose flour
1 quart milk
3 cups shredded sharp Cheddar cheese
3 cups shredded Gruyere cheese
2 cloves garlic, smashed
1/2 teaspoon freshly ground pepper
Kosher salt
1/2 teaspoon freshly grated nutmeg
7 medium Yukon gold potatoes, unpeeled, cut in 1/2-inch thick coins
1/4 cup chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 300 degrees F.
  • Melt 4 tablespoons of the butter in a large, oven-safe high-sided skillet over medium-high heat. When the foam subsides, add the flour and cook, stirring constantly, until it has the consistency of wet sand, about 3 minutes. Remove from the heat and whisk in the milk, little by little.
  • Put the saucepan over high heat and bring to a boil, whisking constantly. Lower the heat and whisk in 2 cups of the Cheddar, 2 cups of the Gruyere, the garlic, pepper and salt. Whisk until the cheese is melted, then stir in the nutmeg. Add the sliced potatoes to the pan. Scatter the remaining 2 tablespoons butter and the remaining 1 cup Cheddar and 1 cup Gruyere over the top.
  • Bake in the oven for 45 minutes, then increase the oven temperature to 400 degrees F., and bake until the potatoes are fork-tender and the top is bubbly and golden brown, about 15 minutes more. (Cover the dish with foil if the top becomes too dark before the potatoes are tender.) Scatter the chopped parsley over the top, and serve.

CREAMY AU GRATIN POTATOES

Creamy Au Gratin Potatoes image

This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

Yield Makes 8 servings

Number Of Ingredients 7

3 pounds Yukon Gold potatoes, peeled, cut into 1/8-inch-thick rounds
2 teaspoons salt
1 teaspoon ground black pepper
2 1/2 teaspoons dried tarragon
1 1/2 cups (packed) grated sharp white cheddar cheese (about 6 ounces)
1 cup whipping cream
1 cup dry white wine

Steps:

  • Preheat oven to 400°F. Butter 13x9x2-inch glass baking dish. Layer 1/3 of potatoes in prepared dish, overlapping slightly. Sprinkle with 1/3 of salt and 1/3 of pepper. Sprinkle with 1/3 of tarragon, then with 1/3 of cheese. Repeat layering twice more with remaining potatoes, salt, pepper, tarragon, and cheese.
  • Whisk cream and wine in medium bowl to blend. Pour over potatoes. Bake uncovered until potatoes are tender when pierced with knife and top is golden, about 1 hour. Let gratin stand 5 minutes before serving.

Tips:

  • Use a mandoline to thinly slice the potatoes evenly. This will help them cook evenly and prevent them from becoming mushy.
  • Soak the potato slices in cold water for 30 minutes before cooking. This will help remove the starch and prevent them from sticking together.
  • Use a heavy-bottomed pan or Dutch oven to cook the potatoes. This will help evenly distribute the heat and prevent them from burning.
  • Don't overcrowd the pan when cooking the potatoes. This will prevent them from cooking evenly.
  • Cook the potatoes until they are tender but still slightly firm. Overcooking will make them mushy.
  • Use a good quality cheddar cheese that melts well. This will help create a creamy, flavorful sauce.
  • Grate the cheese fresh for the best flavor and texture.
  • Season the potato gratin with salt, pepper, and other spices to taste.
  • Bake the potato gratin until the cheese is melted and bubbly and the top is golden brown.
  • Let the potato gratin rest for a few minutes before serving. This will help it set and make it easier to slice.

Conclusion:

Potato gratin is a classic French dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. With its creamy, cheesy interior and crispy, golden brown top, potato gratin is sure to be a hit with everyone at your table.
