TURKEY AND POTATO POCKETS
This is a recipe thrown together based on what I had on hand. My husband loved it and told me to write it down, so here it goes. Let me know what you think. It's a savory little pastry that's fairly hearty and can be spiced a thousand different ways. The base is the turkey, potatoes, and pastry and the cook can make up the rest! I just threw this together without measuring so the measurements are just guesses. Prepare it to taste.

POTATO POCKETS
Steps:
- Cover the potatoes with water in a large saucepan, cook until barely tender, about 30 minutes. Drain and run cool water over until cool enough to handle. Slice into about 1/2 inch thick slices. Combine with the garlic, mushrooms and onions. Toss with the soy sauce in a large bowl. Brush or spray the grill with oil, put the grill on medium heat. In a single layer grill the vegetables until lightly browned, and tender. Sprinkle with cheese just before serving.
Tips:
- Choose the right potatoes: Russet potatoes are the best choice for potato pockets because they are large and have a high starch content, which makes them fluffy and easy to work with.
- Boil the potatoes until they are tender but still firm: If the potatoes are overcooked, they will be too soft and difficult to handle.
- Use a potato ricer to get the smoothest potato filling: A potato ricer will help you get rid of any lumps in the potatoes, resulting in a smooth and creamy filling.
- Season the potato filling generously: Don't be afraid to add plenty of salt, pepper, and other seasonings to the potato filling. This will help to bring out the flavor of the potatoes and make them more delicious.
- Be careful not to overfill the potato pockets: If you overfill the potato pockets, they will be difficult to seal and they may burst open during baking.
- Bake the potato pockets until they are golden brown: This will ensure that they are cooked through and that the filling is hot and melted.
Conclusion:
Potato pockets are a delicious and versatile dish that can be served as an appetizer, main course, or side dish. They are easy to make and can be customized to your liking. With a variety of fillings to choose from, potato pockets are sure to please everyone at your table.
