LEMON VINAIGRETTE POTATO SALAD
I developed this recipe for a friend who needed a potato salad that could withstand Fourth of July weather. The vinaigrette was a safe and delicious alternative to traditional mayonnaise-based potato salads. I've also substituted fresh thyme for the basil. Tips:
- Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape well and are less likely to fall apart when boiled.
- Boil the potatoes until just tender: Overcooked potatoes will be mushy and difficult to slice.
- Cool the potatoes completely before dressing them: This will help the potatoes absorb the dressing better.
- Use a light hand with the dressing: You don't want to overpower the delicate flavor of the potatoes.
- Add fresh herbs and vegetables to the salad: This will give the salad a bright and refreshing flavor.
- Serve the salad immediately or chill it for later: Potato salad is best served fresh, but it can also be chilled for up to 3 days.
