Provided by Molly Yeh

Categories     main-dish

Time 1h45m

Yield 6 to 8 people

Number Of Ingredients 19

4 sesame seed burger buns, cut into 3/4-inch pieces
1 tablespoon flavorless oil
Kosher salt and freshly ground black pepper
3 slices bacon
1 pound ground beef (93 percent lean)
Kosher salt and freshly ground black pepper
1 medium onion, finely chopped
2 large carrots, finely chopped
2 stalks celery, finely chopped
3 cloves garlic, finely chopped
2 teaspoons mustard powder
2 pounds russet potatoes, diced
6 cups low-sodium chicken stock
1/3 cup chopped fresh parsley
1/4 cup heavy cream
10 ounces shredded Swiss cheese
2 tablespoons pickle brine plus 1/2 cup chopped pickles
Ketchup, for garnish
Mayonnaise, for garnish

Steps:

  • For the toasted sesame buns: Set the oven to broil. Toss the sesame bun chunks on a sheet pan with the oil and a pinch of salt and pepper. Broil until golden brown, about 5 minutes.
  • For the cheeseburger potato soup: In a large Dutch oven, cook the bacon over medium heat until crispy, about 7 minutes. Remove to a paper towel lined plate to cool, then roughly chop. Set aside.
  • Add the beef and a pinch of salt to the Dutch oven and cook, breaking up with a spoon, until browned, 4 to 5 minutes (it will continue to cook through). Add the onion, carrot, celery and a good pinch of salt and pepper and cook until translucent, about 10 minutes. Add the garlic and mustard powder and cook for another minute. Add the potatoes, stock, parsley, 1 1/2 teaspoons salt and a bunch of turns of pepper and bring to a boil, then simmer until the potatoes are tender (pierce with a fork to check), 30 to 40 minutes.
  • Add the heavy cream and 8 ounces cheese and stir until the cheese is melted.
  • Finish the soup with the pickle brine. Taste and adjust for seasoning as desired. Ladle the soup into bowls, then top with some of the remaining shredded cheese, pickles, bacon, a drizzle of ketchup, mayo if you're freaky, and toasted sesame buns.

POTATO HAMBURGER CASSEROLE

Potato Hamburger Casserole image

Found this in a recipe box that my mother buys at garage sales. Have not tried it yet, but it sounds good and want to post here so I don't lose it. That and the paper it is written on is very thin and fading. Simple basic meal of potatoes and meat, enjoy.

Categories     One Dish Meal

Time 1h30m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 lb ground beef
1 large onion, chopped
1 garlic clove, crushed
1 (10 1/2 ounce) can cream of chicken soup
salt and pepper
6 large potatoes
1 cup whole milk

Steps:

  • Brown ground beef and drain off fat, if any.
  • Add onions and garlic to ground beef, saute until translucent.
  • Add cream of chicken soup to ground beef/onions/garlic and stir to mix.
  • Salt and pepper to taste.
  • Peel and slice potatoes 1/4 inch thick.
  • In a greased casserole dish, layer 3 of the potatoes.
  • Layer hot ground beef mix over the top.
  • Topping with the last 3 potatoes.
  • Heat milk in pan that you used to cook the ground beef.
  • Pour heated milk over casserole. Hopefully 1 cup will work as directions say to experiment, poke potatoes during cooking and add more if necessary.
  • Cover with foil and bake for 1 hour to 1 hour and 15 minutes.
  • Removing foil last 20 minutes of baking to brown potatoes on top.

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for potato soup because they are starchy and break down easily, creating a smooth and creamy texture. If you don't have Russet potatoes, you can use all-purpose potatoes, but they may not be as creamy.
  • Cook the potatoes until they are very soft: This will ensure that they break down easily and create a smooth soup. You can check if the potatoes are done by piercing them with a fork. If the fork goes through easily, the potatoes are done.
  • Use a good quality stock: The stock is the base of the soup, so it's important to use a good quality stock. You can use chicken, beef, or vegetable stock, depending on your preference. If you don't have time to make your own stock, you can use store-bought stock, but be sure to choose a low-sodium variety.
  • Don't overcook the hamburger: The hamburger should be cooked just until it is browned. If you overcook it, it will become tough and dry.
  • Add your favorite vegetables: You can add any vegetables you like to your potato soup. Some popular choices include carrots, celery, onions, and peas. You can also add frozen vegetables to the soup.
  • Season the soup to taste: Once you've added all of the ingredients to the soup, be sure to season it to taste. You can add salt, pepper, garlic powder, onion powder, or any other seasonings you like.

Conclusion:

Potato soup with hamburger is a hearty and delicious soup that is perfect for a cold winter day. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a comforting and satisfying soup, give this recipe a try.
