SMOKY POTATO SOUP

Smoky Potato Soup image

This soup is a variation of my Irish mother's potato soup. I won third prize in the San Diego Union's Potato Recipe Contest. I love the combination of rosemary and garlic in this soup. I use an immersion blender and lightly puree the soup, rather than putting it in my traditional blender...much much safer!

½ onion, chopped
1 teaspoon garlic salt
1 teaspoon dried tarragon
2 dashes liquid smoke flavoring
3 potatoes, peeled and cubed

Tips:

  • Use a variety of potatoes: You can use all russets, all Yukon golds, or a combination of both. Each type of potato has a slightly different flavor and texture, so using a variety will give your soup a more complex flavor.
  • Don't overcook the potatoes: The potatoes should be tender but still hold their shape. If you overcook them, they will become mushy and the soup will be too thick.
  • Use a good quality broth: The broth is the base of the soup, so it's important to use a good quality broth. You can use chicken broth, vegetable broth, or beef broth, depending on your preference.
  • Add plenty of vegetables: Vegetables add flavor, color, and nutrients to the soup. You can add any vegetables you like, but some good options include carrots, celery, onion, and garlic.
  • Use smoked sausage or links: The smoked sausage or links add a smoky flavor to the soup. You can use any type of smoked sausage or links you like, but some good options include kielbasa, andouille sausage, or bratwurst.
  • Season the soup to taste: Once the soup is cooked, taste it and season it with salt and pepper to taste.

Conclusion:

Potato soup with smoky links is a hearty, flavorful, and easy-to-make soup that is perfect for a cold winter day. You can easily customize to your liking by using different types of potatoes, vegetables, and smoked sausage or links. So next time you're looking for a comforting and satisfying soup, give this potato soup with smoky links a try.
