TOPPING:
3 cups hot mashed potatoes (with milk and butter)
1 can (11 ounces) Mexicorn, drained
1 can (16 ounces) kidney beans, rinsed and drained
1/4 cup thinly sliced green onions
1 cup shredded cheddar or Mexican cheese blend, divided

Steps:

  • Combine the first six ingredients; crumble beef over mixture and mix well. Press into an ungreased 9-in. square baking pan. 1 (11 ounce) can whole kernel corn, drained (with red and green peppers)
1/4 cup green onion, thinly sliced
1/2-1 cup taco blend cheese, shredded

Steps:

  • Heat oven to 375 degrees.
  • In large bowl, combine meatloaf ingredients, mixing lightly but thoroughly; gently press into bottom of 9-inch square baking pan.

1/4 Cup Canned Crispy Fried Onions
