CREAMY POTATO SALAD WITH YOGURT VINAIGRETTE

Creamy Potato Salad With Yogurt Vinaigrette image

You may worry about the amount of dressing in this luscious salad, but you'll find that it is largely absorbed by the potatoes. The salad resembles a classic creamy potato salad with lots of crunchy celery, but there's only a smidgen of mayonnaise here. The technique of softening the onions with boiling water comes from the cookbook author Deborah Madison.

SHEET-PAN CHICKEN WITH POTATOES, ARUGULA AND GARLIC YOGURT

Sheet-Pan Chicken With Potatoes, Arugula and Garlic Yogurt image

Your typical sheet-pan chicken recipe roasts everything together on a pan at once. This version pairs potatoes with the poultry, and tops everything off with fresh herbs and arugula, making it a true one-pan meal, salad included. A savory yogurt sauce adds a creamy touch, but it's optional if you're not a yogurt sauce fan. Feel free to double the recipe if you're feeding a crowd, though make sure to use two sheet pans so that everything is spread out in one layer, which is critical for browning.

2 ounces baby arugula
Chopped fresh dill, as needed
Lemon juice, as needed

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 14

12 new potatoes
1 1/4 cups yogurt, I like high fat Greek yogurt
1 1/4 cups water
1/4 teaspoon turmeric
1 teaspoon chili powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1 teaspoon salt
1 teaspoon brown sugar
2 teaspoons olive oil
1 teaspoon whole cumin seed
1 tablespoon fresh coriander, chopped (cilantro)
2 fresh green chilies, sliced, and seeded
1 fresh coriander sprig (optional)

Steps:

  • 1. Boil the potatoes in salted water with their skins on until they are just tender, then drain and set aside.
  • 2. Mix together yogurt, water, turmeric, chili powder, ground coriander, ground cumin, salt and sugar in a bowl. Set aside.
  • 3. Heat the oil in a medium saucepan and add whole cumin seeds. cook for a minute or two.
  • 4. Reduce the heat, stir in the yogurt mixture and cook for about 3 minutes over a medium heat. If you do not let it cool down enough the yogurt will curdle, this is fine but it ruins the texture.
  • 5. Add the fresh coriander (cilantro), green chilies, and potatoes. Blend everything together and cook for a further 5-7 minutes, stirring occasionally.

BAKED POTATOES WITH YOGURT CHEESE

Baked Potatoes with Yogurt Cheese image

SECRET INGREDIENT Made by draining yogurt to remove excess moisture, yogurt cheese is a tangy, low-fat alternative to sour cream. Once you've discovered how easy it is to prepare, you'll find many ways to use it-on top of baked potatoes, spread on crackers or bread, or served as a dip for chips or blanched vegetables. Try it plain or flavored with the variation that follows.

Yield serves 4

Number Of Ingredients 4

2 cups plain low-fat yogurt
1/2 teaspoon coarse salt
1/4 teaspoon ground pepper
4 medium russet potatoes, scrubbed

Steps:

  • Line a fine sieve with a coffee filter or paper towel and set over a large glass measuring cup or deep bowl. Fill sieve with yogurt. Cover with plastic wrap, and refrigerate at least 8 hours (or up to 24 hours).
  • Discard liquid that has collected in the measuring cup; transfer yogurt cheese to a bowl. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper.

  • Split potatoes open with a fork; serve with yogurt cheese.
  • Cook 1 garlic clove in boiling water 1 minute; remove, and chop finely. Stir garlic and 3 tablespoons finely chopped fresh chives into yogurt cheese

Tips:

  • Choose the right potatoes: For the best results, use a variety of potato that holds its shape well when cooked, such as Yukon Gold or russet potatoes.
  • Boil the potatoes until they are tender but not mushy: Overcooked potatoes will fall apart when mixed with the yogurt.
  • Use high-quality yogurt: Plain yogurt is the best choice for this dish, as it will provide a tangy and creamy flavor. Greek yogurt can also be used, but it will be thicker and less tangy.
  • Add your favorite seasonings: This dish is very versatile, so you can add any seasonings that you like. Some popular options include garlic, cumin, coriander, and mint.
  • Serve immediately: This dish is best served immediately after it is made. The potatoes will start to soften and absorb the yogurt as it sits, so it is best to enjoy it fresh.

Conclusion:

Potato in Yogurt is a delicious and versatile dish that can be enjoyed as a side dish or a main course. It is a great way to use up leftover potatoes, and it is also a healthy and affordable meal. With so many different variations, there is sure to be a recipe that everyone will enjoy.
