Provided by Katie Lee Biegel

Time 15m

Yield 1 sandwich

Number Of Ingredients 9

2 slices soft white sandwich bread, such as Wonder Bread
Mayonnaise, for spreading
Yellow mustard, for spreading
4 thin slices bologna (preferably nitrate-free and pork)
Unsalted butter, for the skillet
2 slices American cheese
2 tablespoons chow chow
1/2 cup BBQ potato chips
1/2 cup shredded iceberg lettuce

Steps:

  • Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
  • Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
  • Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.

POTSIE'S FAMOUS FRIED BOLONY SANDWICH

Potsie's Famous Fried Bolony Sandwich image

I was raised on fried bolony sandwiches. I remember eating a simple version while strapped to my booster seat as a little boy. I outgrew my booster chair many years ago and I have modified the ingredients for a more adult palette... but I still love a fried bolony sandwich.

Time 6m

Yield 1 sandwich, 1 serving(s)

Number Of Ingredients 5

2 slices white bread
2 slices , thick cut balony
1 tablespoon yellow mustard
1 slice of a large onion
1 slice of a large ripe tomatoes

Steps:

  • It ain't rocket science or quantum physics. Just make the sandwich.
  • Tip: score the balony slices with a knife and they won't curl up when frying. I like to fry them until they are just a little blackened but still plenty greasy. If the grease doesn't drip down your arm and off your elbows then you have overcooked it.

Yield Makes 2

Number Of Ingredients 7

2 Tbsp. spicy brown mustard
1 Tbsp. mayonnaise
1 Tbsp. finely chopped dill pickles, plus 2 Tbsp. brine
Freshly ground black pepper
7 oz. thinly sliced bologna
4 slices seeded rye bread
A few iceberg lettuce leaves, torn to size of bread

Steps:

  • Mix mustard, mayonnaise, and chopped pickles in a small bowl to combine; season with pepper.
  • Arrange half of bologna slices in a neat stack. Starting near the center and working toward the edges of the stack, cut four 1"-long slits, spacing evenly. Repeat with remaining bologna. Heat a dry large skillet, preferably cast iron, over medium-high. Working in batches, arrange bologna slices in a single layer in skillet and cook until browned all over and crisp, about 2 minutes per side. Transfer to a plate as they are done. Save skillet with any fat.
  • Arrange bread in a single layer in reserved skillet and cook over medium high until golden brown, about 2 minutes per side. Transfer to a cutting board.
  • To build sandwiches, spread mustard mixture evenly over each slice of bread. Divide bologna between 2 slices and top with lettuce; drizzle with pickle brine. Close up sandwiches and cut in half.

Tips

  • Use high-quality bologna. The better the quality of the bologna, the better the sandwich will be.
  • Slice the bologna thinly. This will help it cook evenly.
  • Season the bologna with salt and pepper before frying. This will help to enhance the flavor.
  • Fry the bologna in a hot skillet until it is golden brown and crispy.
  • Serve the fried bologna sandwich on a soft bun with your favorite toppings.
  • For a classic fried bologna sandwich, top it with mustard and ketchup.
  • For a more creative sandwich, try topping it with cheese, bacon, or avocado.
  • Fried bologna sandwiches are also great for dipping in ranch dressing or barbecue sauce.

Conclusion

Fried bologna sandwiches are a delicious and easy-to-make meal. They are perfect for a quick lunch or dinner, and they can be customized to your liking. So next time you are looking for a simple and satisfying meal, give fried bologna sandwiches a try.
