1/2 cup shredded fat-free monterey jack cheese
1/4 cup water
1 tablespoon minced onion

2 teaspoons chili powder
hot sauce (as desired)

4 can(s) 16 oz each red kidney beans, drained, liquid reserved
1/2 c butter
16 oz shredded cheddar and co-jack cheeses, mixed
1/3 c diced jalapenos. i used pickled jarred kind. use as much as you prefer.
2 Tbsp minced fresh onion
2 clove garlic, minced

Steps:

  • 1. Drain beans, reserving 2/3 cups of the liquid
  • 2. Mash beans with potato masher until creamy
  • 3. Mix together all ingredients
  • 4. Heat over very low heat until cheese is fully melted.
  • 5. Simmer on very low, very slow heat for 20 minutes. I recommend putting them into crock pot for this...less chance to burn cheese on bottom.
  • 6. Serve with hot with Dip Size Frito Chips or Tortilla Chips!
