Time 40m

Yield About 30 pralines

Number Of Ingredients 8

3 cups pecans
1 1/2 cups granulated sugar
1 1/2 cups light brown sugar
3/4 cup heavy cream
1/3 cup milk
1/3 cup butter
3/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Spread the pecans on a baking sheet and bake in a 350-degree oven until lightly toasted, 10 to 15 minutes.
  • Combine all the ingredients except the pecans and vanilla extract in a 4-quart glass bowl. Heat in a microwave oven on high power for 5 minutes. Using oven mitts or potholders, carefully transfer the bowl to a countertop and stir with a heat-resistant spatula. Return to microwave and heat for 5 more minutes.
  • Stir in the pecans and heat for another 5 minutes. Stir and check the temperature with a digital or candy thermometer. If it reads 240 degrees, proceed to Step 4. If not, continue heating on high power, stirring and checking the temperature every minute until it does.
  • Remove from oven and let the mix sit undisturbed. After 20 minutes, add the vanilla extract and stir vigorously until it becomes cloudy and creamy. Using 2 spoons, scoop and shape into 2-inch-diameter mounds on a baking sheet lined with foil, parchment paper or a silicone mat. If the mix becomes too hard to shape, reheat for 15 seconds. Let the pralines rest for 30 minutes. Keep stored in an airtight container.

Mawmaw Bellard's Pralines (Microwave Recipe) image

There are tons of microwave praline recipes out there, but this is the one that tastes like the ones my mawmaw made, before microwaves were a thought..LOLOL The ones in stores aren't like hers, they are dark brown and creamy. Her pralines were thinner, glassy looking surface, and very sugary!

Time 7m

Yield 15 pralines

Number Of Ingredients 5

1/3 cup evaporated milk
1 cup sugar
3/4 cup pecans
1 1/2 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • combine all except for vanilla extract in a microwave safe 1 quart bowl or measuring cup.
  • Microwave on high for about 6 minutes, stirring every 2 minute.
  • Add Vanilla extract and stir quickly.
  • Drop by teaspoonfuls onto waxed paper and allow to harden.
  • If it sets up too fast while in the bowl just add a bit of evaporated milk.
  • My problem was always spooning them out before the sugary mixture was thick enough or had cooled enough. I solved that by stirring quickly and checking to see if it starts to harden around the edges of my spoon or bowl. That's when it's ready to spoon out. It's very humid here so unsure how different climates will affect the outcome.

EASY MICROWAVE PRALINES

Easy Microwave Pralines image

This sure beats the old way of stirring until your hand feels like falling off!

Provided by Rayne Highsmith

Categories     Candies

Time 30m

Number Of Ingredients 5

1 lb brown sugar, light
2 Tbsp corn syrup, light
1 c heavy whipping cream
2 Tbsp butter, cold
2 c pecans, halved

Steps:

  • 1. Stir brown sugar, syrup and cream together. Microwave on high for 10 minutes.
  • 2. Remove bowl from microwave and add butter and pecans. Beat by hand until thickened.
  • 3. Drop by teaspoon onto parchment paper or waxed paper. Let cool and enjoy!

Tips:

  • Use a microwave-safe bowl. This is important to prevent the bowl from cracking or melting in the microwave.
  • Be careful not to overheat the pralines. Overheating can cause the pralines to burn or become too hard.
  • Stir the pralines frequently. This will help to prevent the sugar from crystallizing and will ensure that the pralines are evenly cooked.
  • Add the nuts and flavorings at the end of the cooking process. This will help to prevent the nuts from burning and will allow the flavorings to blend well with the pralines.
  • Let the pralines cool completely before storing them. This will help to prevent the pralines from sticking together.

Conclusion:

Microwave pralines are a quick and easy way to make a delicious and festive candy. With just a few simple ingredients and a microwave, you can have a batch of pralines ready to enjoy in no time. Whether you are making them for a special occasion or just as a sweet treat, microwave pralines are sure to please everyone.
