2 pounds boneless, skinless chicken breasts or thighs
1/4 cup Dijon mustard
1/4 cup coarse mustard, whole grain
3 tablespoon honey
2 tablespoon light brown sugar
1/2 teaspoon salt
1/4 teaspoon onion powder
1 cup chicken stock or broth

Steps:

  • Place chicken in bottom of pressure cooker Whisk together both mustards, honey, brown sugar, salt and onion powder to create glaze. Spread half of glaze over chicken, save remainder. Pour chicken broth in cooker, secure lid, cook on high for 8 minutes. Release pressure naturally for 10 minutes, then quick release. Use tongs to remove chicken to plate. Spread with remaining glaze before serving.

4 garlic cloves, minced
2 teaspoons dried thyme
Salt and pepper to taste
1 tablespoon canola oil
2 tablespoons cornstarch
1-1/2 cups pineapple juice
1/2 cup water
1/2 cup Dijon mustard
1/3 cup honey
Hot cooked rice or noodles

Steps:

  • Rub chicken with garlic and thyme. Sprinkle with salt and pepper. In a large skillet, cook chicken in oil until a thermometer reads 165°. Try it, you're going to love it! It just doesn't get any easier than this. Five minutes of prep work, 30 minutes of cooking time, and you have a fantastic meal. The original recipe states that it makes enough sauce for 4 chicken breasts, but I've found that it can easily be stretched to serve with at least 6 decent-size chicken breasts.

1/3 cup Dijon mustard
1 tablespoon honey
3 tablespoons apricot preserves
1 teaspoon ground ginger

  • Preheat oven to 350 degrees.
  • Lightly spray the bottom and sides of a 10-inch casserole dish (or any baking pan large enough to hold the chicken breasts). Place the chicken breasts in the coated baking pan.
