- Put oven rack in middle position and preheat oven to 425°F.
- Brush a shallow baking pan (1/2 to 1 inch deep) with 2 tablespoons oil. Arrange tomato slices in 1 layer in baking pan and sprinkle with a scant 1/2 teaspoon salt and 1/4 teaspoon pepper. Roast tomatoes until just tender (not falling apart), about 20 minutes.
- While tomatoes roast, cut potatoes crosswise into 1/4-inch-thick slices and toss with 5 tablespoons oil in a large bowl.

- Heat the oil over medium heat in a large, heavy soup pot or Dutch oven. Add the onion. Cook, stirring often, until tender, about five minutes. Stir in half the garlic and a generous pinch of salt. Cook, stirring, until fragrant, about 30 seconds to a minute. Add the tomatoes, sugar, basil sprigs or leaves and remaining garlic. Cook, stirring often, until the tomatoes have cooked down and smell fragrant, 15 to 20 minutes.
- Add the water, Parmesan rind and salt to taste. Bring to a simmer, cover and reduce the heat to low. Simmer 15 minutes. Add the tapioca or rice, and simmer for another 15 minutes until the tapioca is tender and the soup fragrant. Remove the basil sprigs and Parmesan rind. Puree in a blender in small batches, taking care to place a towel over the top of the blender and hold it down tightly. If you used fresh unpeeled tomatoes and want a silkier soup, put through a strainer, using a spatula or the back of a ladle to push the soup through. Return to the pot, add pepper to taste and adjust salt. Serve garnished with garlic croutons and/or Parmesan, if desired, and slivered basil leaves. If serving cold, refrigerate until chilled.

- Wash and dry the fresh produce. Small dice the potatoes. Separate the chard leaves and stems; roughly chop the leaves and thinly slice the stems. Peel and mince the garlic. Chop the chicken into bite size pieces.
- Season the chopped chicken with salt and pepper; toss to coat. In a large, high-sided pan (or pot), heat 2 teaspoons of olive oil on medium-high until hot. Add the seasoned chicken and cook, stirring occasionally, 4 to 6 minutes, or until browned. Add the tomato paste; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until the chicken is cooked through and the tomato paste is dark red.
- Add the potatoes, zucchini, chard stems and ¾ of the garlic to the pan of chicken; season with salt and pepper. Cook, stirring occasionally, 2 to 3 minutes, or until slightly tender and fragrant. Add Herbes de Provence to taste (I usually use a tablespoon or more). Cook, stirring frequently, 30 seconds to 1 minute, or until thoroughly combined and fragrant.
- Add the chard leaves, the vinegar and 2 cups of water to the pan of chicken and vegetables, scraping up any browned bits from the bottom of the pan. Heat to boiling on high. Once boiling, reduce the heat to medium-high and simmer, stirring occasionally, 8 to 10 minutes, or until the potatoes are tender when pierced with a fork and the liquid has reduced in volume by about half. Remove from heat and season with salt and pepper to taste.
- If you want a richer sauce feel free to make an easy aioli. In a medium bowl, combine 2 tbsp mayonnaise, a clove or so of fresh garlic paste and 1/2 tbsp of red wine vinegar; season with salt and pepper to taste.

- Preheat the oven to 400ºF (200ºC).
- With a sharp knife, score a ring around each potato, just deep enough to break the skin. Place the potatoes in a medium pot of cold water. Bring to a boil and cook for about 8 minutes, until about halfway cooked.
- Drain the potatoes, and rinse with cold water. Peel off the skin.
- Cut the potatoes into ½-inch (1 cm) pieces and set aside.
