This is a very creamy and spicy corn chowder with shrimp and poblano peppers. The lobster base is optional, but in my opinion you really need to use it if you can.

Tips:
- Use fresh ingredients whenever possible. This will give your chowder the best flavor.
- Don't be afraid to experiment with different types of seafood. You could use shrimp, scallops, or even lobster in place of the crab.
- Be careful not to overcook the seafood. It should be cooked through, but still tender.
- Season the chowder to taste. You may want to add more salt, pepper, or cayenne pepper, depending on your preferences.
- Serve the chowder hot, with a side of crusty bread or crackers.
