Place an olive in the middle of each pastry square and gently roll the dough around it into a ball or simply fold the dough around the olive, exposing the olive through the sides. - On a lightly floured work surface, roll out puff pastry to a 12 1/2-by-6-inch rectangle, about 1/8-inch thick. Using a large sharp knife, cut the rectangle into a 5 1/2-by-6-inch rectangle and a 7-by-6-inch rectangle. Place both rectangles on a baking sheet and transfer to refrigerator; let chill 20 minutes.
- Place the 5 1/2-by-6-inch rectangle on a baking sheet. Place 5 olives, end-to-end, in a straight line along the short side of the rectangle, leaving about a 5/8-inch border. Repeat process two more times to make three lines of olives.
- In a small bowl, whisk together egg yolk and milk. Brush egg mixture on all exposed spaces between olives. Cover with the 7-by-6-inch rectangle of puff pastry, pressing the whole surface of the dough between the olives firmly with your fingertips. Transfer to refrigerator; let chill 20 minutes.

- Heat the olive oil in a skillet over medium-high heat. Stir in the minced shallot, morel and oyster mushrooms; cook until the mushrooms have lightly browned, and are soft. Pour in the white wine, and cook until evaporated. Scrape the mushrooms onto a plate, and set aside to cool. Meanwhile, stir together the cumin, paprika, oregano, brown sugar, garlic powder, parsley flakes, pepper, and salt in a bowl. Coat the lamb rack with the spice mixture and set aside.
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly grease.
- Spread the mushroom mixture evenly over one side of the puff pastry. Cut a slit 2 inches away from one edge of the puff pastry for each bone on the lamb rack. Carefully poke the bones through the slits and wrap the pastry around the lamb rack, pressing the edges of the pastry together to seal. Place onto the prepared baking sheet and brush with the beaten egg yolk. Refrigerate the lamb for 10 minutes before baking.

- Place Olive OIl and Butter in large skillet. Add onion/shallot and Pancetta and garlicto pan. Sautee for about 10 minute Remove mixture from pan set aside. Add Chicken to juices in pan. Lightly salt and pepper chicken. (the Pancetta adds a lot of salt to the juices) Brown chicken on both sides and chicken is cooked through. When chicken is done, remove from pan, set aside. Add wine to drippings in pan. This will deglaze the pan and get all the brown bits off bottom of pan. Add chicken broth and bring to a low simmer and cover. In the mean time, roll out Puff Pastry into a rectangle. Cut 4-6 squares out. Place chicken in each square add a Tablespoon of onion/Pancetta mixure to each chicken and top with a slice of Fontina. Fold up Puff Pastry and place seem side down on baking sheet. Brush with egg wash. Place in 350 degree oven and bake for 30 minute until pastry is puffed up and browned. Remove from oven and serve with simmering sauce over chicken.
