PUMPKIN CARAMEL POUND CAKE
I got this from the newspaper where I get my coupons out of. They always have little recipes in there but this one was the first that I have tried. I made it and my picky boyfriend loved it. It is really good but really sweet to. It was very fun to make. I am thinking of cooking it with pecans next time.

Tips:
- To make the pumpkin puree, simply roast a pumpkin until tender, then scoop out the flesh and blend it until smooth. You can also use canned pumpkin puree if you're short on time.
- For the caramel sauce, use a heavy-bottomed saucepan to prevent the sugar from burning. Cook the sugar mixture until it reaches a deep amber color, then remove from heat and stir in the butter and cream. Be careful, as the mixture will bubble up vigorously.
- When making the bourbon glaze, use a good-quality bourbon for the best flavor. You can also add a teaspoon of vanilla extract or cinnamon to the glaze for extra flavor.
- To assemble the poke cake, use a wooden skewer or toothpick to poke holes all over the cooled cake. Then, pour the caramel sauce and bourbon glaze over the cake, allowing it to soak in. Refrigerate the cake for at least 30 minutes before serving.
- Garnish the cake with whipped cream, chopped nuts, or a sprinkle of pumpkin pie spice before serving.
Conclusion:
This pumpkin caramel bourbon poke cake is a delicious and decadent dessert that is perfect for any occasion. The combination of pumpkin, caramel, and bourbon flavors is simply irresistible. With its moist and fluffy texture, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert to make, give this pumpkin caramel bourbon poke cake a try. You won't be disappointed!
