Yield Makes about 4 cups

Number Of Ingredients 6

2 lb pumpkin or butternut squash, halved lengthwise, peeled, seeded, and cut into 1/2-inch cubes
1 cup sugar
1 cup water
1/2 cup dry white wine
1/2 cup golden raisins
2 tablespoons dry mustard such as Colman's

Steps:

  • Toss pumpkin with sugar and a pinch of salt in a large bowl. Let stand at room temperature, stirring occasionally, 1 hour. Chill, covered, 8 hours. (Sugar will liquefy.)
  • Simmer pumpkin mixture, water, and wine in a wide 6-quart heavy pot until pumpkin is just tender, about 10 minutes. Transfer pumpkin with a slotted spoon to a bowl and stir in raisins, then boil cooking liquid until reduced to about 1 cup, about 10 minutes. Transfer syrup to a measuring cup, then slowly whisk into mustard in a small bowl until smooth. Stir into pumpkin mixture. Cool, then chill, covered, at least 8 hours for flavors to meld. Serve at room temperature.

THE BEST RELISH I'VE EVER HAD

The Best Relish I've Ever Had image

Time 11h10m

Yield 128

Number Of Ingredients 11

7 large English cucumbers
4 large sweet onions, peeled
¼ cup pickling salt
3 cups white sugar
½ cup all-purpose flour
1 teaspoon ground turmeric
1 teaspoon ground ginger
1 teaspoon celery seed
3 cups distilled white vinegar
1 cup water
4 (1 pint) canning jars with lids and rings

Steps:

  • Grate the cucumbers and onions into a large bowl using the large holes of a box grater. Sprinkle the pickling salt over the top. Cover tightly, and allow to rest at room temperature overnight.
  • Squeeze as much liquid as possible out of the cucumber mixture; set aside. Whisk together the sugar, flour, turmeric, ginger, and celery seed. Heat the vinegar and water in a large, heavy pot over medium-high heat. Whisk in the sugar mixture until smooth. Stir in the cucumber mixture. Bring to a boil and cook, stirring frequently, until thickened, about 15 minutes.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process pint jars for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

Tips:

  • To make the pumpkin puree for the relish, you can either roast or steam the pumpkin. If you are roasting the pumpkin, preheat your oven to 400 degrees Fahrenheit and roast the pumpkin for 30-40 minutes, or until it is tender. If you are steaming the pumpkin, place the pumpkin in a steamer basket over a pot of boiling water and steam for 15-20 minutes, or until it is tender.
  • Use a sharp knife to dice the onion, pepper, and celery. This will help to prevent the vegetables from becoming too mushy when you cook them.
  • Be sure to cook the onion, pepper, and celery until they are soft. This will help to bring out their flavor and make the relish more flavorful.
  • Add the pumpkin puree, mustard, sugar, vinegar, and spices to the cooked vegetables and bring to a boil. Then, reduce the heat and simmer for 15 minutes, or until the relish has thickened.
  • Canning the relish is a great way to preserve it for later use. To do this, follow the instructions in the recipe carefully.

Conclusion:

Pumpkin mustard relish is a delicious and versatile condiment that can be used in a variety of dishes. It is perfect for adding a sweet and tangy flavor to sandwiches, burgers, hot dogs, and salads. It can also be used as a dipping sauce for vegetables or crackers. With its unique flavor and easy-to-make recipe, pumpkin mustard relish is a great addition to any kitchen.
