PUMPKIN CHOCOLATE CHIP OATMEAL COOKIE BARS

Pumpkin Chocolate Chip Oatmeal Cookie Bars image

I was restless and bored one night and couldn't sleep so I decided to bake something. After raiding the kitchen this is what I threw together. I love that it has a mild sweetness and isn't over powering. So, if you prefer really sweet things I suggest you add more sugar. I also love how light these are.

  • Add wet ingredients to dry and stir until combined.
  • Spoon minture into greased 9 X 13inch pan and bake for 25 mins or until toothpick inserted in the middle comes out clean.
  • Allow "cake" to cool slightly and transfer from pan to wire rack to continue cooling.
  • When cool slice width wise into 1/2 inch strips and then in half length wise.
  • Place evenly on cookie sheet(s) and bake for an additonal 10-15 minutes
  • Remove from oven and let cool slightly. Dust with powdered sugar.
  • Allow the cookies to cool completely and enjoy!

Tips:

  • Use fresh pumpkin puree. Fresh pumpkin puree has a more vibrant flavor than canned puree. If you don't have time to make your own, look for canned pumpkin puree that is unsweetened and 100% pumpkin.
  • Don't overmix the batter. Overmixing the batter will make the bars tough. Mix just until the ingredients are combined.
  • Bake the bars until a toothpick inserted into the center comes out clean. If the toothpick comes out with wet batter, the bars need to bake longer.
  • Let the bars cool completely before cutting them. This will help them hold their shape.
  • Serve the bars warm or at room temperature. They're also delicious cold, but the flavors are more pronounced when they're warm.

Conclusion:

Pumpkin oatmeal bars are a delicious and healthy snack or breakfast option. They're easy to make and can be customized to your liking. With a few simple ingredients, you can create a delicious and satisfying treat that the whole family will enjoy.
