I have searched for a moist and delicious healthy pumpkin muffin recipe for a long time. Finally, I modified a very old banana bread recipe and voila--it makes muffins or a loaf and it is fantastic! These muffins also taste great with a cream cheese icing.

PUMPKIN-PECAN MUFFINS
This is a tasty, healthy muffin that both kids and adults will love. I got the recipe from a whole foods cookbook published by La Leche League. The ingredients list looks lengthy because many things are included in both the muffin and the topping so I just have two bowls ready and measure for both at the same time. To give an extra nutritional boost, I cut the oil to 1/4 C and add an extra 1/4 C of pumpkin. They come out very moist.

Tips:
- Use fresh pumpkin puree: Fresh pumpkin puree provides a vibrant flavor and texture to the muffins. If using canned pumpkin puree, make sure it is unsweetened.
- Don't overmix the batter: Overmixing the batter can result in tough muffins. Mix the batter just until the ingredients are combined.
- Fill the muffin cups evenly: To ensure even baking, fill the muffin cups evenly with batter.
- Bake until a toothpick inserted into the center comes out clean: This is the best way to ensure that the muffins are cooked through.
- Let the muffins cool completely before frosting: This will help to prevent the frosting from melting.

With their moist texture, sweet pumpkin flavor, and crunchy pecan topping, these muffins are sure to be a hit. Whether you enjoy them for breakfast, lunch, or a snack, pumpkin pecan muffins are a great way to satisfy your sweet tooth.
