5 egg yolks
5 egg whites
⅓ cup milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1 ½ teaspoons baking powder
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 pint heavy whipping cream
10 maraschino cherries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter and flour bottom of a 9-inch springform pan.
  • Beat the egg yolks with 3/4 cup sugar until light in color and doubled in volume. Stir in milk, vanilla, flour and baking powder.
  • In a small bowl, beat egg whites until soft peaks form. Gradually add remaining 1/4 cup sugar. Beat until firm but not dry. Fold 1/3 of the egg whites into the yolk mixture to lighten it; fold in remaining egg whites. Pour batter into prepared pan.
  • Bake in preheated oven for 45 to 50 minutes or until cake tester inserted into the middle comes out clean. Allow to cool 10 minutes.
  • Loosen edge of cake with knife before removing side of pan. Cool cake completely on a wire rack.
  • Place cooled cake on a deep serving plate. Use a two-pronged meat fork or a cake tester to pierce the surface of cake.
  • Mix together condensed milk, evaporated milk and 1/4 cup of the whipping cream. Set aside 1 cup of the measured milk mixture and refrigerate for another use. Pour remaining milk mixture over cake slowly until absorbed. Whip the remaining whipping cream until it thickens and reaches spreading consistency. Frost cake with whipped cream and garnish with cherries. Store cake in the refrigerator.

4 large eggs (separated)
1 cup white granulated sugar (divided)
2/3 cup pure pumpkin puree
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
1 teaspoon baking powder
2 teaspoon pumpkin spice
1/4 teaspoon salt
3/4 cup whole milk
1 14-ounce can of sweetened condensed milk
1 cup light coconut milk
Whipped Cream (for topping)
1/2 teaspoon ground cinnamon or pumpkin pie spice (for topping)

Steps:

  • Preheat the oven to 350 degrees. Grease a 9x13 cake pan and set aside.
  • Add the egg whites and 1/2 cup sugar to the bowl of a stand-up mixer (with the whisk attachment) and beat on high until stiff peaks about 3 to 4 minutes. Scoop it out and put it into another bowl.
  • Place the bowl back on the stand-up mixer (no need to clean it out) and add the remaining 1/2 cup sugar and egg yolks. Beat until pale yellow and double in volume. Next, mix in the pumpkin puree and vanilla.

1 cup butter, at room temperature
4 eggs
1 ½ cups canned pumpkin
1 cup sour cream
2 teaspoons vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda

1 teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
1 cup evaporated milk
1 cup half-and-half
