12 roses (preferably red, organic, unsprayed)
12 chestnuts
2 teaspoons butter
2 teaspoons cornstarch
2 drops rose oil
2 tablespoons anise
2 tablespoons honey
2 garlic cloves
6 quail
1 pitaya
salt
pepper

Steps:

  • Brown quail in butter, sprinkle with salt and pepper to taste.
  • Remove petals from roses and grind with anise in a mortar.
  • Separately brown chestnuts in a pan, then remove peels, cover with water and simmer till soft.
  • Drain and puree.
  • Mince garlic and brown slightly in butter. When transparent, add to chestnut puree along with honey, ground pitaya and rose petals.
  • Salt to taste.
  • To thicken, use 2 tablespoons corn starch.
  • Strain through a fine sieve and add no more than 2 drops of rose oil.
  • As soon as all seasonings have been added remove from heat.
  • Immerse quail in the sauce for 10 minutes, then remove, drain and place in a 9"x13" baking dish.
  • Place in oven preheated to 350F and bake at 350F for 15 to 20 minutes, depending on size of quail.

12 royal jungle roses
2 TBS anise
12 chestnuts
2 cloves of garlic, minced
3 pomegranates ground
1 strained
1 or 3 pitaya ground
1 strained (cactus fruit)
2 TBS rose water
1/4 c orange juice concentrate
1/2 lb bread
1 med apple, peeled; chopped
1/4 c chopped walnuts
1/3 c raisins
1/2 c cognac or rum
1 cinnamon
1 butter
1 basmati rice with almonds
1 and raisins
1 broccoli heads
1 champagne grapes

Steps:

  • Clean and prepare Quail. De-petal and rinse 6 Roses using only larger outer petals. Sliver with scissors. Separate into 4 equal parts. Moisten bread bit by bit, shredding and balling until consistency is mushy yet firm. Add 1/4 of the slivered rose petals, walnuts, apples, raisins and a dash of cinnamon. (to taste) 1/4 cup of Cognac and 1 tablespoon Rosewater. Mix all together by hand until well blended and stuff Quail. Place remainder in covered ceramic cookware to be placed in oven with Quail. In large Mexican mortar, add the Anise to 2 parts of the slivered Roses (reserving the other half for stuffing ; garnish) and grind to a very wet puree. Brown, peel and boil the Chestnuts then puree. Set aside. Heat garlic in a large sauté pan with butter until transparent. Add Chestnut puree, Pomegranates (or Pitaya), 1 tablespoon Rosewater, Frozen Orange Juice Concentrate ; 1/4 cup of Cognac or Rum. Heat lightly adding salt and pepper to taste. Remove from heat. Marinate Quail in sauce for 15 minutes. Meanwhile begin preparing Basmati Rice adding Raisins, Walnuts in last ten then five minutes of steaming (Respectively). Bind Quail and place in broiler pan covered with a foil tent or cheesecloth. Put in oven for 20 minutes at 350 degrees (Along side remaining stuffing). Baste constantly. Remove foil or cheesecloth and allow to brown for five more minutes. Serve on a platter, rice in the middle, Quail fanned out, Scoops of stuffing between. Garnished with champagne or red seedless grapes, Remaining shredded Roses strewn over top, add steamed broccoli heads between and around.

2 cups water, plus 1 cup
2 tablespoons butter
2 garlic cloves, minced
1/2 teaspoon anise seed
12 red or pink roses
2 red plums, skinned
12 fresh chestnuts
2 tablespoons honey
salt & freshly ground black pepper
4 boneless fresh quail
olive oil

Steps:

  • Heat the water to boiling.
  • Meanwhile, melt the butter in large skillet, cook the garlic and aniseed for 5 minutes, and set aside.
  • Put the rose petals and plums in a blender and puree until smooth and set aside.
  • Cut an "x" over the flat ends of the chestnuts with a knife. Toast the chestnuts in a hot cast iron skillet for 5 minutes. When the shells open, add the chestnuts to the boiling water and cook for 15 minutes. Drain the chestnuts and allow them to cool. Peel the chestnuts, add them to the rose petal mixture, and puree while adding the remaining cup of water, slowly.
  • Reheat the skillet with garlic butter mixture and add the rose petals puree. Simmer for 10 minutes then whisk in the honey, salt, and pepper.
  • Push the sauce through a sieve, into a clean pan, pressing on the solids to extract the juice and some chestnut pulp. Keep the sauce warm.
  • Preheat a grill or grill pan.
  • Drizzle the quails with olive oil and season with salt. Grill the quails until they are medium rare, about 5 minutes per side. Serve with the Rose Petal Sauce.

8 to 10 fresh chestnuts or 1/2 cup chestnut puree
2 tablespoons butter
4 garlic cloves, peeled and sliced
1 teaspoon anise seed
10 red or pink roses with open blooms, petals only, unsprayed
1 large red "tuna" cactus fruit, or the meat of 1 large or 2 small meat plums, such as Elephant Heart or Santa Rosa, peeled, seeded and chopped
1 cup chicken stock or water
2 tablespoons honey
Salt and pepper to taste
1/4 teaspoon freshly ground white pepper
Red food color
8 quail, fresh or frozen and thawed, cleaned
1/2 teaspoon salt
Freshly ground black pepper
8 garlic cloves, peeled
1 small white onion, peeled and cut into eighths

Steps:

  • For the sauce: Make an X over the flat ends of the chestnuts with a small sharp knife. Toast in oven at 350 degrees F 10 to 12 minutes. Bring 1 quart water to a boil and drop in the chestnuts. Boil, uncovered, for 20 minutes and drain. Set aside to cool. When the chestnuts are cool enough to handle, peel the shells and remove the skins. Place them in the blender.
  • Melt the butter in a large skillet and saute the garlic and anise seed until lightly browned. Add the rose petals, and the cactus or plums and saute 1 to 2 minutes. Add to the blender with honey, salt and pepper and puree while slowly adding 1 cup stock or water.
  • Strain the puree into a skillet and bring to a boil. Lower heat and simmer for 10 minutes, stirring. Add red food coloring if desired and set aside, covered.
  • For the quail: Season quail with salt and pepper and stuff each with an onion slice and garlic clove. Tie legs together with string. Saute the quail in butter to brown, then pan roast for 8 to 10 minutes at 400 degrees F.
  • Reheat the sauce if necessary. Add the quail to the sauce and stir, covering the birds completely, for 3 minutes. Serve 2 quail per person with plain white rice to absorb all the lovely, perfumed sauce.
