BRAZILIAN HOT DOG (CACHORRO QUENTE)



Brazilian Hot Dog (Cachorro Quente) image

Number Of Ingredients 15

2 tablespoons olive oil
1/2 teaspoon crushed red pepper
1 yellow onion, diced
1 green bell pepper, diced
1 pound ground sirloin
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
One 15-ounce can crushed tomatoes
4 jumbo hot dogs
4 large brat rolls
1/4 cup grated Parmesan
1 cup crispy bacon bits
1 cup frozen peas, defrosted and slightly heated
1 cup crispy shoestring potatoes
Yellow mustard, for drizzling

Steps:

  • In a large saute pan, heat the oil over medium heat. Add the crushed red pepper, onions and green peppers and sweat until the onions are translucent, about 8 minutes. Add the beef, season with salt and pepper and cook, breaking it up with a spoon, until no longer pink, about 8 minutes. Add the garlic and continue to cook for 1 minute. Add the crushed tomatoes, hot dogs and 1/2 cup water and cook until the sauce thickens, about 15 minutes.
  • For the hot dog build: On each fresh brat roll, place a hot dog, then some meat sauce, Parmesan, bacon bits, peas and shoestring potatoes. Top with a drizzle of yellow mustard.

1 cup sugar
2 cinnamon sticks
2 pieces lemongrass
1 fresh pear, sliced
1 fresh peach, sliced
1 fresh apple, sliced
1 tablespoon whole cloves
1 pint water
1 (750 ml) bottle red wine (Merlot, Cabernet, or Burgundy will all work)
1 1/2 ounces Cointreau liqueur
3 ounces cachaca (rum may be substituted if you can't find the cachaca)

Steps:

  • Combine all the fruit and condiments in a saucepan.
  • Add water and heat to a boil; boil two minutes.
  • Add the wine and boil for another two minutes.
  • Reduce heat to warm and add the Cointreau and the cachaça (or rum).
  • Serve hot.

2 pounds halibut
1 cup mayonnaise
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
1 tablespoon dried dill weed
1 teaspoon mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place halibut in a baking dish. In a medium bowl, mix together mayonnaise, shredded Cheddar cheese, shredded Jack cheese, dill, and mustard. Spread cheese mixture over halibut. Sprinkle more dill on top if you like.
  • Bake in preheated oven for 30 minutes, or until fish is done, and cheese is golden brown and bubbly.

1 cup cubed cooked chicken
1 cup cubed fully cooked ham
1 (8 ounce) can water chestnuts, drained and chopped
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 ¼ cups milk
½ cup mayonnaise
¼ cup minced fresh parsley
¾ teaspoon salt
⅛ teaspoon curry powder
⅓ cup sliced almonds

Steps:

  • Place rice in a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with chicken, ham and water chestnuts. Combine the next six ingredients; pour over chicken mixture. Bake, uncovered, at 350 degrees F for 30-35 minutes or until bubbly. Sprinkle with almonds; bake 5 minutes longer.
