1/2 lb chorizo sausages, casings removed
1/4 c chopped onion
10 oz reduced-fat, shredded monterey jack cheese, or mexican blend cheese
2 Tbsp canned diced tomatoes w/ green chiles, drained

  • 1. Preheat broiler. Spray a medium-sized casserole dish w/ cooking speay, lightly.
  • 2. In skillet over med-high heat, brown the sausages, breaking it up as you brown them. Drain off any fat. Reserve 1 tbsp of the sausages. Spread sausages into bottom of casserole dish.
  • 3. Place cheese and tomatoes w/ chiles in a microwaveable bowl. Microwave in 15 second intervals, stirring until melted and combined. Spread cheese mix over sausages.
