QUICHE MARAICHERE (FRENCH VEGETABLE TART)

Quiche Maraichere (French Vegetable Tart) image

This delicious quiche is unusual in that it has a lot more vegetables than custard. It is great both warm and at room temperature. The recipe is from Dorie Greenspan's wonderful cookbook, "Around My French Table: More Than 300 Recipes from My Home to Yours". If the sides of your tart pan are not very high or if your crust has shrunk, you might not be able to get all the custard into the pan. If you think you've got a short-sided crust, make a smaller amount of custard using 1/2 cup heavy cream and 1 egg. You can also try this as a crustless quiche.

Time 1h

Yield 6 serving(s)

Number Of Ingredients 11

1 tablespoon butter
2 stalks celery, peeled, trimmed and cut into small dice
2 slender leeks, white and light green parts only, trimmed, quartered lengthwise and finely sliced
2 slender carrots, peeled, trimmed and finely diced
1 medium red pepper, trimmed, seeded and finely diced
2/3 cup heavy cream (depending on height of crust, see above)
1 large egg
1 large egg yolk
2/3 cup grated cheese, such as Gruyere, Parmesan or cheddar
salt & freshly ground black pepper
partially baked tart shell, still in its pan. (You can also use a storebought crust)

Steps:

  • Put a skillet over medium-low heat, add the butter and, when it's melted, toss in the vegetables. Cook, stirring, for about 10 minutes, or until the vegetables are tender. Season with salt and pepper, then scrape the vegetables into a bowl and let them cool while you preheat the oven.
  • When you're ready to bake the quiche, center a rack in the oven and preheat the oven to 400°F.
  • Put the partially-baked crust on a lined baking sheet.
  • Spoon the vegetables into the tart shell and spread them evenly along the base of the crust - the vegetables will just about fill the crust. Whisk the cream, egg and egg yolk together, season with salt and pepper and carefully pour the custard mixture over the vegetables. Depending on how your crust baked, you may have too much custard - don't push it. Pour in as much custard as you can without overflowing the sides of the crust, wait a few minutes until it's settled into the vegetable's nooks and crannies then, if you think it will take it, pour in a little more. Very carefully slide the baking sheet into the oven. (If it's easier for you, put the quiche into the oven without the custard, then pour in the cream.).
  • Bake the quiche for 20 minutes, sprinkle the cheese over the top and bake for another 10 to 15 minutes, or until the cheese is golden and, most important, the quiche is set and uniformly puffed (wait for the center to puff). Transfer the quiche to a rack and cool until it's only just warm or until it reaches room temperature before serving.

Time 2h5m

Yield 6 servings

Number Of Ingredients 15

1 ¼ cups all purpose flour, plus more for dusting
½ teaspoon kosher salt
1 stick unsalted butter, cubed and chilled
3 tablespoons ice water
1 teaspoon kosher salt, plus more for blanching
1 asparagu, woody ends trimmed
2 large egg yolks
3 large eggs
1 ½ cups heavy cream
4 oz goat cheese, divided
¼ teaspoon freshly ground black pepper
1 pinch McCormick® Ground Nutmeg
3 tablespoons fresh chives, divided, thinly sliced
pie weight, or dried beans
glass pie plate, 8 in (20 cm)

Steps:

  • Add the flour and salt to a food processor. Pulse to combine. Add the butter and pulse 6-8 times until broken down into pea-sized pieces. Add the water and pulse 8-10 times, until the dough comes together. Turn the dough out onto a clean surface and shape into a disc. Tightly wrap in plastic wrap and refrigerate for 30-60 minutes
  • Preheat the oven to 375°F (190°C).
  • On a lightly floured surface, roll the dough out to a circle about ⅛-inch thick. Roll the dough onto the rolling pin and gently transfer to an 8-inch pie dish. Press the dough flush against the dish. Trim any excess dough around the edges. Fold the edges of dough back underneath itself, then crimp using an index finger knuckle on one hand and the thumb and index finger on the other hand.
  • Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 10-15 minutes, until the crust is beginning to brown around the edges. Remove the crust from the oven and carefully lift out the parchment paper and baking beans.
  • Prick the bottom of the crust with a fork and return to the oven for another 3-5 minutes, until the bottom is beginning to brown. Remove from the oven and set on a rack to cool while you make the filling.
  • Fill a large, high-walled skillet with water and bring to a simmer over medium-high heat. Once simmering, season the water generously with salt. Prepare an ice bath in a large bowl and set nearby.
  • Blanch the asparagus in the simmering water for 30-60 seconds, until bright green and tender. Transfer to the ice bath to cool for 1-2 minutes, then drain and let dry on a paper towel or kitchen towel-lined baking sheet.
  • Reserve 8-10 spears of asparagus. Cut the rest into 1-inch pieces.
  • In a large bowl, whisk together the egg yolks, eggs, heavy cream, black pepper, salt, and nutmeg. Add the asparagus pieces and 2 tablespoons of chives and whisk to incorporate.
  • Spread 3 ounces of the goat cheese across the bottom.
  • Pour the filling into the crust. Arrange the reserved asparagus spears on top. Sprinkle with the remaining tablespoon of chives and dot with the remaining ounce of goat cheese.
  • Bake the quiche for 28-35 minutes, until the center is set, but still jiggles slightly when gently shaken.
  • Transfer the quiche to a wire rack to cool for 30 minutes before slicing and serving.
  • Enjoy!

OTTOLENGHI'S VERY FULL ROASTED VEGETABLE TART

Ottolenghi's Very Full Roasted Vegetable Tart image

A fantastic Mediterranean feast, full to the brim with roasted vegetables. Serves four to six. I think it would work well with phyllo too. This recipe is from Yotam Ottolenghi's vegetarian cookbook "Plenty".

Time 1h35m

Yield 6 serving(s)

Number Of Ingredients 16

1 red bell pepper
1 yellow bell pepper
100 ml olive oil
1 eggplants or 1 aubergine, cut into 4cm dice
salt and black pepper
1 sweet potato, peeled and cut into 3cm dice
1 small zucchini or 1 small courgette, cut into 3cm dice
2 medium onions, thinly sliced
2 bay leaves
300 g shortcrust pastry
8 fresh thyme sprigs, picked
120 g ricotta cheese
120 g feta
7 cherry tomatoes, halved
2 medium free-range eggs
200 ml double cream

Steps:

  • Heat the oven to 230C/gas mark 8. Cut around the pepper stalks, then lift out and discard, along with all the seeds. Put the peppers in a small ovenproof dish, drizzle with oil and put on the top shelf of the oven.
  • Mix the aubergine with four tablespoons of oil and season. Tip into a big baking tin and place on the shelf below the peppers. After 12 minutes, add the sweet potato, stir and roast for 12 minutes more. Now add the courgette, stir and roast for a further 10-12 minutes. By now, the peppers should be brown and the vegetables cooked. Remove everything from the oven and turn the heat to 160C/gas mark 2½. Cover the peppers with foil and leave to cool; once cool, peel and tear into strips.
  • Meanwhile, heat two tablespoons of oil in a frying pan on medium heat. Sauté the onions with the bay leaves and some salt for 25 minutes, stirring occasionally, until brown, soft and sweet. Discard the bay and set aside.
  • Grease a 22cm loose-bottomed tart tin. Roll the pastry to a 3mm-thick circle large enough to line the tin with some overhang. Press it into the edges. Line with baking parchment and fill with baking beans. Bake blind for 30 minutes, lift out the paper and beans, and bake for 10-15 minutes more, until golden brown. Remove and allow to cool a little. Spread the onions over the bottom, then top with roasted veg. Scatter over half the thyme, dot first with small chunks of both cheeses and then the tomato halves, cut-side up. Whisk the eggs and cream with some salt and pepper, and pour into the tart; the tomatoes and cheese should remain exposed. Scatter the remaining thyme on top. Bake for 35-45 minutes, until the filling sets and turns golden. Rest for at least 10 minutes, then trim off the excess pastry, remove the tart from its tin and serve.
