QUICK AND EASY SALSA WITH BLACK BEANS AND CORN

Quick and Easy Salsa With Black Beans and Corn image

Yesterday was my turn to bring snacks to my Cuban salsa class -- the dance that is. After scanning dozens of recipes, I couldn't find what I wanted so I created this one. After watching my classmates tip the bowl, I decided it was worth posting. While the ingredients are familiar, the ratio of tomatoes, beans and corn is quite different from the dozens already here. So easy, its a crowd pleaser.

1 jalapeno, finely diced
1/2 red onion, finely diced
2 tablespoons lime juice, about 1 lime

Tips:

  • Choose fresh, high-quality corn for the best flavor. Look for ears with bright green husks and plump kernels.
  • If using frozen corn, thaw it completely before using. This will help prevent the salsa from becoming watery.
  • Use a variety of colors of bell peppers to add visual appeal to the salsa. Red, orange, and yellow bell peppers are all good choices.
  • Add a little bit of heat to the salsa with diced jalapeƱos or cayenne pepper. Be careful not to add too much, or the salsa will be too spicy.
  • Fresh herbs, such as cilantro and basil, can add a lot of flavor to the salsa. Add them just before serving for the best flavor.
  • Serve the salsa with tortilla chips, tacos, burritos, or your favorite Mexican dish.

Conclusion:

Corn salsa is a delicious and versatile dish that can be enjoyed in many different ways. It is a great way to use up fresh corn and other summer vegetables.
