Steps:
- Butter a cookie sheet. Set aside. Stir together sugar and corn syrup in a 2 quart glass bowl. Microwave 4 minutes. Add peanuts, stir well and microwave 3 minutes. Add butter and vanilla, stir well and microwave 1 minute. Add soda and stir well until light and foamy. Pour at once onto prepared cookie sheet. Spread thin. Cool, then break into pieces.
Tips:
- Use a candy thermometer to accurately measure the temperature of the sugar syrup. This will ensure that the brittle reaches the correct stage of doneness.
- Be careful when handling the hot sugar syrup. It can cause severe burns if it comes into contact with your skin.
- Work quickly when pouring the sugar syrup onto the baking sheet. The syrup will start to set quickly, so you need to spread it out evenly before it hardens.
- Do not stir the sugar syrup while it is cooking. Stirring can cause the sugar to crystallize and result in a grainy brittle.
- If you want to add nuts or other mix-ins to the brittle, stir them in after the syrup has been poured onto the baking sheet.
- Let the brittle cool completely before breaking it into pieces. This will help to prevent it from crumbling.
Conclusion:
Peanut brittle is a delicious and easy-to-make candy that is perfect for any occasion. With just a few simple ingredients and a little bit of time, you can create a batch of brittle that will be enjoyed by everyone. So next time you're looking for a sweet treat, give this peanut brittle recipe a try.
