Steps:
- -Heat the oil in a large pot over medium heat. Add all but 2 tablespoons of the onion and cook until softened, about 5 minutes. Add the garlic and cook 1 minute longer. Stir in the beans, tomatoes, cumin, coriander, vegetable broth, and salt and pepper to taste. Bring to a boil, then reduce heat to medium and simmer until the flavors are blended, about 15 minutes. -While the soup is simmering combine the reserved 2 tablespoons onion in a bowl with the mango, cilantro, and lime juice. Mix well and set aside. -When ready to serve, ladle the soup into bowls and top with a spoonful of the salsa.
Tips:
- Fresh Ingredients: Use fresh, ripe ingredients for the best flavor. Look for plump, brightly colored tomatoes, onions, and cilantro.
- Choose the Right Beans: Black beans are the traditional choice for black bean salsa, but you can also use other beans like kidney beans or pinto beans.
- Don't Overcook the Beans: If you're using dried beans, be sure to cook them until they're tender but not mushy.
- Add Some Spice: If you like a little heat, add some diced jalapeño or serrano pepper to the salsa. You can also use chili powder or cayenne pepper.
- Chill Before Serving: After you've made the salsa, let it chill in the refrigerator for at least 30 minutes before serving. This will allow the flavors to meld together.
Conclusion:
Black bean salsa is a delicious and versatile dish that can be enjoyed in many different ways. It's perfect as a dip with tortilla chips, as a topping for tacos or burritos, or as a side dish with grilled chicken or fish. So next time you're looking for a quick and easy snack or side dish, give black bean salsa a try!
