STEAK (OR CHICKEN) FAJITAS

Steak (Or Chicken) Fajitas image

These are so quick and tasty. You can use strips of boneless chicken breast instead of the beef. Feel free to double the marinade. The flavor is so great for such a short marination time. You can can do them up ahead of time and have the meat sit longer if you wish.

QUICK CHICKEN FAJITA BURRITOS

Quick Chicken Fajita Burritos image

Always made with refried black beans, which is why I call them burritos. It just doesn't taste right with just meat and veggies. I also like to serve this dish with spinach instead of crunchy lettuce, because it's one of those things that you can easily sneak spinach into for the kids (as if they needed to grow any taller). There are much better recipes for fajitas out there that actually involve marinating or at least brining the chicken, which really does give it better flavor. This is the "quick and dirty" version. 4 tortillas
1 (15 ounce) can refried black beans
1 cup cheddar cheese
1 cup sour cream
1 cup spinach, shredded
2 tablespoons paprika
2 tablespoons dried onion flakes
4 teaspoons cornstarch

  • Spoon beans, meat and veggies into tortillas and top with cheese, spinach and sour cream, or have people assemble themselves.
  • Combine last 10 ingredients in a lidded container - I used an old spice jar - and use 3 tablespoons to equal 1 packet of fajita or taco seasoning.

QUICK CHICKEN FAJITAS

Provided by Anastasia St. Amand

Yield Serves 4

Number Of Ingredients 15

3 tablespoons vegetable oil
1 large onion, sliced
1 red or yellow bell pepper, thinly sliced
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon dried oregano, crumbled
1/4 teaspoon dried thyme, crumbled
1/2 cup canned chicken broth
4 boneless chicken breast halves, skinned, cut into strips
Warm flour tortillas
1 tomato, chopped
1 avocado, peeled, chopped
1 cup purchased salsa

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add onion and bell pepper and sauté until almost tender, about 10 minutes. Add cumin, paprika, cayenne, garlic powder, oregano and thyme and continue cooking 1 minute. Mix in broth and bring to boil. Add chicken and stir until cooked through, about 5 minutes. Spoon chicken mixture into tortillas. Top with tomato and avocado. Roll up. Serve, passing salsa separately.

Tips:

  • Use fresh ingredients whenever possible. Fresh chicken, vegetables, and spices will give your fajitas the best flavor.
  • Marinate the chicken for at least 30 minutes. This will help to tenderize the chicken and infuse it with flavor.
  • Cook the chicken over high heat. This will help to create a nice sear on the outside of the chicken and keep it juicy on the inside.
  • Don't overcrowd the pan. If you overcrowd the pan, the chicken will not cook evenly.
  • Cook the vegetables until they are tender-crisp. You don't want the vegetables to be too soft or too crunchy.
  • Serve the fajitas immediately with your favorite toppings. Some popular toppings include guacamole, sour cream, salsa, and cheese.

Conclusion:

Chicken fajitas are a delicious and easy-to-make meal that is perfect for any occasion. Whether you are having a casual dinner with family or friends or hosting a party, chicken fajitas are sure to be a hit. With a little planning and preparation, you can make chicken fajitas that are even better than your favorite restaurant. So next time you are looking for a quick and easy meal, give chicken fajitas a try.
