Yield Makes 8 to 10 servings

Number Of Ingredients 9

2 tablespoons olive oil
1 large onion, chopped
1 1/2 tablespoons sugar
4 teaspoons curry powder
8 cups cauliflower florets (from 1 large head), chopped
10 ounces Yukon Gold potatoes, peeled, diced into 1/2-inch cubes (about 1 1/4 cups)
7 cups low-salt chicken broth
Plain yogurt
Chopped fresh mint

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onion and sauté until translucent, stirring often, about 5 minutes. Add sugar and curry powder; stir 1 minute. Add cauliflower and potatoes; stir 1 minute. Add broth and bring to boil. Reduce heat to medium, cover, and simmer until vegetables are tender, about 35 minutes. Working in batches, puree soup in blender. Return soup to same pot and bring to simmer. Season with salt and pepper. Ladle soup into bowls; top with yogurt and some mint.

Tips:

  • Choose the right cauliflower: For the best results, use a head of cauliflower that is fresh, firm, and has tightly packed florets.
  • Cut the cauliflower into even-sized florets: This will help them cook evenly.
  • Don't overcrowd the pan: When cooking the cauliflower, make sure to give it enough space so that it can brown properly.
  • Use a good quality curry powder: The curry powder is the key ingredient in this dish, so it's important to use a good quality one. Look for a curry powder that is fresh and has a strong aroma.
  • Adjust the amount of heat to your liking: This dish can be made as mild or as spicy as you like. If you like spicy food, add more chili powder or cayenne pepper.
  • Serve with your favorite sides: This dish can be served with a variety of sides, such as rice, quinoa, or naan bread.

Conclusion:

Curried cauliflower is a quick and easy dish that is perfect for a weeknight meal. It's also a great way to get your daily dose of vegetables. The curry powder gives the cauliflower a delicious flavor, and the coconut milk makes it creamy and rich. This dish can be made as mild or as spicy as you like, so it's sure to please everyone at the table.
