This recipe has been used by me for several years, but keeps getting changed just a bit every time depending on what is in the pantry and freezer. If you prefer poultry instead of pork, substitute 1 pound ground chicken or turkey for the ground pork.

EASY AND QUICK GROUND BEEF AND SALSA CHILI
This meal can be on the table in around an hour, even faster if you have freezer-ready ground beef mix, or you can simmer it for longer. If you do not have any chili seasoning mix use about 2-4 tablespoons chili powder instead, you can substitute 2 cups tomato sauce mixed with 1 cup water in place of tomato juice. This is great served with crostini or crusty buns

QUICK AND EASY GREEN CHILI-POTATO ENCHILADA CASSEROLE #5FIX
5-Ingredient Fix Contest Entry. I have a large family, (12 of us) and I buy the large bags of tortilla chips from a grocery warehouse. We always had a fourth of a bag left because by then they would be all crushed and the kids wouldn't eat them. One day my husband gave me a challenge to try to come up with some way to use the crushed chips, at the same time one of my grandsons decided he was going vegetarian. So I took it on as a double challenge and also decided I could only use what I had on hand. This is how the recipe was born. Ingredients can be adjusted to fit whatever size casserole dish you might want to use. Serve with a dollop of sour cream and a side of mexican rice (optional) I make it in a large alluminum tray (20 3/4"L x 12 13/16"W x 3 3/8"D) the qty of the ingredients are for this pan but can be adjusted for any size casserole pan.

QUICK AND EASY VEGETARIAN CHILI
I went through a veg phase, and this was a staple. I'm back to being an omnivore, but I still make this once a week or so. It's great topped with a little cheese (regular or soy) and a chunk of cornbread. If you're a Weight Watcher, this is 3 points for a 2 cup serving. If you're a die-hard carnivore, you can add ground meat, but I think it's much fresher and tastier without.

Steps:
- Cook rice, according to package directions. I use 1/2 the amount called for. Saute garlic, onion, green pepper, and spices in olive oil until onion is transkucent, about five minutes. if using meat, I add it in now and cook until done. Add in remaining ingredients and heat. Serve over cooked rice. I add in tomatoe sauce if adding in meat. I also add rice in directly to chili and use tomatoe sauce to thin chili. Top with grated cheese and sour cream. Salt and Pepper to taste.
Tips:
- Select High-Quality Ingredients: Use fresh, flavorful ingredients for the best chili. Choose ripe tomatoes, tender bell peppers, and well-seasoned ground beef or turkey.
- Properly Brown the Meat: Browning the meat adds depth of flavor to the chili. Do not overcrowd the pan, and cook the meat until it is evenly browned.
- Use a Variety of Spices: Chili is all about the spices. Experiment with different combinations to find your perfect blend. Common spices include chili powder, cumin, paprika, oregano, and cayenne pepper.
- Simmer for Flavor Development: The longer the chili simmers, the more the flavors will meld and develop. Aim for at least 30 minutes, but you can simmer for up to several hours.
- Taste and Adjust Seasoning: Taste the chili throughout the cooking process and adjust the seasoning as needed. Add more spices, salt, or pepper to achieve your desired flavor profile.
