QUICK FLATBREAD PIZZA

I recently found out I'm diabetic, and have had to change up how I cook things. I really miss my pizza but I came up with this on the fly to fit in with my new diet.

Time 27m

Yield 2 individual pizzas, 2 serving(s)

Number Of Ingredients 10

2 flour tortillas (try flatout flatbreads)
4 teaspoons olive oil
6 ounces tomato paste
2 large mixed mushrooms
1/2 onion
2 ounces feta cheese
2 ounces pre-shredded mozzarella cheese
3 ounces pepperoni
1 teaspoon basil
1 teaspoon oregano

Steps:

  • Place tortillas over parchment paper on a cookie sheet.
  • Spread a teaspoon of olive olive oil over each tortilla.
  • Spread 3 oz of tomato paste over each tortilla.
  • Preheat oven to 400 degrees.
  • Next place pepperoni over tomato paste.
  • Slice and spread onions and mushrooms next.
  • Add basil and oregano and drizzle remaining olive oil.
  • Top with crumbled feta and pizza cheese.
  • Bake for 12 minutes or until cheese is browned and crust looks crispy.
  • Enjoy!

Tips:

  • For a crispy crust: Preheat your oven to the highest temperature possible before baking the flatbread.
  • Use a variety of toppings: Get creative with your toppings! You can use anything from classic pizza ingredients like pepperoni and cheese to more unique options like roasted vegetables or grilled chicken.
  • Don't overload the flatbread: Too many toppings can make the flatbread soggy. Stick to a thin layer of sauce, cheese, and toppings.
  • Bake the flatbread until the cheese is melted and bubbly: This will ensure that the flatbread is cooked through and the cheese is gooey and delicious.
  • Slice and serve immediately: Flatbread is best enjoyed fresh out of the oven. Slice it into wedges and serve it with your favorite dipping sauce.

Conclusion:

Flatbread pizza is a quick and easy meal that is perfect for any occasion. With a variety of toppings to choose from, there is something for everyone. So next time you're looking for a delicious and satisfying meal, give flatbread pizza a try.
