QUICK MICROWAVE CARAMEL POPCORN

Quick Microwave Caramel Popcorn image

One of my students brought this to class to share with the kids for a party. The kids devoured it and I liked it so much I got it as a gift for Christmas! EDIT: Please make sure to watch this very closely as you may need to cut back the cooking time depending on the power of your microwave. Also- Please see Mamophet's review. I don't recommend reducing this recipe- If you absolutely must reduce it, please use accurate measurements in order to have edible popcorn. The ratio of popcorn to caramel needs to be maintained and the cooking time should be reduced as well.

EASY MICROWAVE CARAMEL POPCORN

Easy Microwave Caramel Popcorn image

Fast and easy and quite delicious, this is my daughter's favorite and a frequent request. Fortunately, I almost always have the ingredients in the pantry and it takes no time at all to throw together! We take this to every sort of kid-oriented activity for which we need to provide a treat. It makes a nice change from cookies and brownies and always disappears fast.

Time 15m

Yield 16 cups (approx.), 6-8 serving(s)

Number Of Ingredients 5

16 cups popped microwave popcorn (2 microwavable bags)
3/4 cup corn syrup (Karo or generic)
1 cup packed brown sugar
2 tablespoons butter
1/2 teaspoon vanilla

Steps:

  • Pop the popcorn according to the instructions and empty into a large bowl (be sure to remove any unpopped kernels).
  • Mix the corn syrup and brown sugar together in a microwave safe bowl and microwave on hight for 3 minutes.
  • Stir butter and vanilla into the brown sugar/syrup mixture and stir until the butter is melted.
  • Pour over the popcorn and stir until thoroughly coated.
  • Spread on cookie sheets (greased or sprayed with cooking spray) and dry until desired hardness. (When hard, I break it up a little more as I put it into the serving bowl to make it truly bite sized.).
  • Prep time includes time to pop popcorn (about 3 minute per bag -- I usually measure out everything else while the popcorn's popping). Cooking time includes mixing but does not include drying time; however, that will vary depending on how hard you want your popcorn. We have a tendency to eat it pretty much right away!

Tips:

  • Use Fresh Popcorn Kernels: For the best results, use fresh popcorn kernels that are free of hulls or debris. Fresh kernels will pop evenly and result in a more flavorful snack.
  • Measure the Ingredients Accurately: It's important to measure the ingredients accurately, especially the caramel mixture. Too much or too little of any ingredient can alter the texture and flavor of the popcorn.
  • Use a Large Microwave-Safe Bowl: Make sure to use a large microwave-safe bowl that can accommodate the popcorn and the caramel mixture comfortably. This will prevent the popcorn from splattering or overflowing during the cooking process.
  • Watch the Popcorn Closely: Keep a close eye on the popcorn while it's cooking in the microwave. It can burn quickly, so it's important to stop the microwave as soon as the popping slows down or stops completely.
  • Let the Caramel Cool Slightly: Once the caramel is made, let it cool for a few minutes before pouring it over the popcorn. This will help prevent the caramel from hardening too quickly and making the popcorn chewy.

Conclusion:

Making caramel popcorn in the microwave is a quick and easy way to satisfy your sweet and salty cravings. With just a few simple ingredients and a few minutes of your time, you can enjoy a delicious snack that is perfect for movie nights, parties, or simply as a treat. So next time you're looking for a tasty snack, give this microwave caramel popcorn recipe a try – you won't be disappointed!
