Instead make this easy homemade chocolate cake that is mixed in the pan it is baked in. Top this moist cake with any type of frosting you want or no frosting at all. I got this recipe from Martha Stewert's Everyday Food Magazine from November 2009.

Provided by Betty Crocker Kitchens

Categories     Dessert

Time 2h10m

Yield 15

Number Of Ingredients 10

2 1/4 cups all-purpose flour
1 3/4 cups sugar
1/2 cup shortening
1 1/2 cups buttermilk
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla
2 oz unsweetened baking chocolate, melted and cooled
2 eggs
1 cup miniature chocolate chips

Steps:

  • Heat oven to 350°F. Grease bottom and sides of desired pan(s) with shortening; lightly flour. For cupcakes, place paper baking cup in each of 24 regular-size muffin cups.
  • In large bowl, beat all ingredients except chocolate chips with electric mixer on medium speed 30 seconds, scraping bowl constantly. Beat on high speed 2 minutes, scraping bowl occasionally. Fold in chocolate chips. Pour batter into pan(s) or divide among muffin cups.
  • Bake as directed below or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan(s) to wire rack. Cool completely, about 1 hour. 13x9-inch rectangle 40 to 45 minutes two 9x5-inch loaves 35 to 40 minutes two 8-inch rounds 40 to 45 minutes two 9-inch rounds 35 to 40 minutes two 9-inch squares 35 to 40 minutes 24 regular-size muffin cups 20 to 25 minutes

Nutrition Facts : Calories 330, Carbohydrate 47 g, Cholesterol 30 mg, Fat 3, Fiber 2 g, Protein 5 g, SaturatedFat 5 g, ServingSize 1 Serving, Sodium 310 mg, Sugar 31 g, TransFat 1 g

Tips:

  • Use room temperature ingredients. This will help the batter come together more easily and will result in a more tender cake.
  • Don't overmix the batter. Overmixing can develop the gluten in the flour, which will make the cake tough. Mix just until the ingredients are combined.
  • Use a nonstick pan. This will help prevent the cake from sticking and will make it easier to flip.
  • Cook the cake over medium heat. This will help to prevent the cake from burning. If you are using a nonstick pan, you may need to reduce the heat to low.
  • Flip the cake carefully. Once the cake is cooked through, carefully flip it over onto a plate. If you are using a nonstick pan, you may not need to grease it.
  • Let the cake cool before serving. This will help the cake to set and will make it easier to slice.

Conclusion:

This quick mix-in-the-pan double chocolate chip cake is a delicious and easy dessert that can be made in just a few minutes. The cake is moist and chocolatey, with a crispy exterior and a gooey center. It is the perfect treat for any occasion.
