Number Of Ingredients 13

1 1/2 lb (700g) boneless skinless chicken breasts
Kosher salt and black pepper
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon coriander
2 tablespoons extra virgin olive oil
1 tablespoon ghee or unsalted butter
12 ounce fresh large mushrooms, (sliced)
1/2 cup chicken broth
3 green onions, (chopped)
2 garlic cloves, (minced)
kosher salt and black pepper
Parsley for garnish

Steps:

  • Heat oven to 200 degrees F. You will use it to keep the chicken warm.
  • Cut chicken breasts in halves the horizontal way to make thinner chicken cutlets. Pat dry and season with salt and pepper. Combine oregano, paprika, and coriander in a small bowl. Season the chicken with the spice mixture on both sides.
  • In a large skillet heat 2 tbsp extra virgin olive oil until shimmering but not smoking. Add the chicken cutlets and cook for 3 to 4 minutes on one side, then turn over and cook for another 3 minutes or so. To check for doneness, cut into a piece with a thin-bladed knife and take a peek. Transfer the chicken to an ovenproof platter and put it in the oven.
  • In the same skillet, now add a tiny bit more extra virgin olive oil. Add ghee and melt. Sautee the mushrooms for 5 minutes. Add broth, green onions, garlic, salt and pepper. Bring to a boil.
  • Add the chicken back to the pan, spoon some of the sauce on top. Serve immediately.

QUICK MUSHROOM CHICKEN

Makes a nice sauce/gravy so it is good served with rice, noodles or mashed potatoes. Adapted from a Campbell's recipe, it was called two step chicken..it has more steps and ingredients now but to my taste it improved the recipe.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

1 tablespoon vegetable oil
4 boneless skinless chicken breast halves
2 cups sliced mushrooms
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup water
1 teaspoon Dijon mustard
ground black pepper
2 tablespoons chopped fresh parsley (or basil)

Steps:

  • Heat the oil in a 10-inch skillet over medium-high heat.
  • Add the chicken and cook for 10 minutes until it's well browned on both sides. Remove the chicken and set aside, add the mushrooms to the skillet and fry for 2 minutes.
  • Stir the soup, water and mustard into the skillet. Heat to a boil, then return the chicken to the skillet and reduce the heat to low.
  • Cover and cook for 5 minutes or until the chicken is cooked through, taste and season with the black pepper.
  • Add the parsley and mix into the sauce.

Tips:

  • Choose the right mushrooms. Different mushrooms have different flavors and textures, so choose the ones that you like best. If you're not sure what to choose, ask your local grocer or farmer for recommendations.
  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your dish.
  • Don't overcrowd the pan. When cooking mushrooms, it's important to give them enough space to brown. If you overcrowd the pan, they will steam instead of brown.
  • Cook the mushrooms until they are tender. You don't want them to be mushy, but you also don't want them to be crunchy.
  • Season the mushrooms to taste. Salt, pepper, and garlic powder are all good options.
  • Serve the mushrooms immediately. They are best when they are fresh out of the pan.

Conclusion:

Mushroom chicken is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover chicken. With a few simple ingredients and a little bit of time, you can have a flavorful and satisfying meal that the whole family will enjoy.
