Quick Pickled Zucchini and Summer Squash image

Preserve summer's bounty with these quick pickled summer squash and zucchini! Add to sandwiches and burgers! 30 minutes of hands-on time!

Provided by Sylvia Fountaine

Categories     pickled

Time 25m

Number Of Ingredients 13

1 lb patty pan, crookneck or zucchini squash-or enough to fill four small 4 oz jars- (pick squash no bigger in diameter than the width of the jars you will be using).
1 small onion or shallot, sliced thin
1 tablespoon salt
1 garlic clove, sliced - per jar
1 T fresh dill -per jar
1 tsp mustard seeds- per jar
1/2 tsp whole peppercorns- per jar
1 small red chile, sliced thin
1/2 cup white vinegar
3/4 cup water
1/4 cup rice vinegar (or sub more white vinegar)
1/4 cup sugar
2 teaspoons salt

Steps:

  • Using a mandolin, carefully slice the summer squash. If using a knife, make sure to cut pieces as evenly as possible, to the same thickness. Thicker slices will result in a crunchier pickle. Paper-thin will be softer.
  • Slice the small onion, or shallot. Toss both onion and squash in a bowl with a tablespoon of salt and let drain in a colander or strainer over a bowl for 2 hours or overnight. Pat dry.
  • Make the pickling solution: In a small pot, bring white wine vinegar, water, rice wine vinegar, sugar, and salt to a boil, stirring until sugar dissolves, let cool slightly.
  • In each 4 oz jar, add about a tablespoon of fresh dill, a teaspoon of mustard seeds, 1/2 tsp peppercorns, a few slices of chile pepper and sliced garlic cloves. You could also try experimenting with other seeds like whole coriander, cumin, or fennel seed. Then layer the squash and onion in jars, and top off with the pickling liquid.
  • Press down on the squash. Seal, and let cool in the fridge.

Time 15m

Number Of Ingredients 12

2 - 2 1/4 lb zucchini (4 medium (green zucchini, yellow squash, or light green Mexican zucchini will work))
3 cloves of garlic (halved)
2-3 bay leaves
6-8 pepper corns
1/4 cup chopped fresh parsley
1/4 cup chopped fresh dill
3 cups of boiling hot water
2 Tbsp olive oil
1/2 cup white vinegar (5% acidity)
1/3 cup granulated sugar
1 Tbsp salt (we used sea salt, non-iodized)
1/2 gallon jar with lid or heat-proof bowl with tightly fitting lid

Steps:

  • Steam sterilize your clean jar: fill it with 1 cup boiling water, cover with lid and swirl boiling hot water inside the jar (use oven mitts to hold the jar and swish carefully so you don't burn your hands or drop the jar (do it over the sink; just in case). Drain the water completely.
  • In the bottom of your clean jar, add 3 halved cloves of garlic, 2-3 bay leaves, and 6-8 peppercorns.
  • Slice zucchini into 1/3" thick rings, discard the ends. Layer zucchini slices tightly, sprinkling dill and parsley between each layer. Pack the zucchini down with a clean cooking utensil if needed. Top with any remaining dill and parsley.
  • Combine all of your marinade ingredients and stir until sugar and salt are dissolved. Carefully pour the hot syrup over the layered zucchini.
  • Cover tightly with lid and let the jar cool to room temperature on the counter then refrigerate overnight. From the time you pour in the water, it should marinate a minimum of 12 hours. Stays good in the fridge for 5-7 days.

QUICK PICKLED ZUCCHINI OR YELLOW SQUASH OR ONION OR BELL PEPPER

Quick Pickled Zucchini or Yellow Squash or Onion or Bell Pepper image

The other day I made a recipe I have done with cucumbers forever with a zucchini that was sitting on the counter. It was great! Then I tried onion and bell pepper, also great. After a little research I found that this can also be frozen well. I have written it with numerous spice variations so it can be a go to recipe. Choose what you like or make up your own.

Categories     < 15 Mins

Time 10m

Yield 1 Batch

Number Of Ingredients 13

2 zucchini, sliced very thin (or other abundant veggie)
1 cup sugar (can reduce to as little as 1/4 cup)
salt
1/2 cup white vinegar (more or less, cover the cucumbers)
1/4 cup dill weed, chopped, fresh (or 1 tbs dry)
2 teaspoons garlic, chopped
1 teaspoon dry mustard
1 teaspoon turmeric
1 teaspoon celery seed
1 teaspoon cinnamon
1 -2 teaspoon serrano chili, chopped (jalapeno or other ok)
1 teaspoon ginger (triple if fresh chopped)
1 teaspoon red pepper flakes

Steps:

  • Mix sugar, salt, vinegar and chosen spice.
  • Add zucchini (or other veggies). Be sure veggies are covered, if not adjust.
  • Let the flavors develop for at least 3 hours in the fridge.
  • This keeps very well in the fridge.
  • If you are doing a big batch, consider freezing after the 3 hours.
  • If you do a bunch of small zip locks or container you will be able to take just enough out at one time.
  • If in zip locks, you can lay them out to freeze and then put a bunch in a larger zip lock for easy handling in the freezer.
  • Remember to mark them, especially if you do a bunch of different spice mixes.
  • If you make cucumbers, test freeze them. I am not sure they would freeze well.

Sautéed Summer Squash with Red Pepper and Onion image

This is the time of year when, no matter what part of the country you live in, tables at farmers' markets are piled high with summer squash, mounds of it: yellow, light green and dark, round and long. This is a vegetable that expresses itself well in a wide range of dishes; just about every cuisine in the world knows how to show it off. It's an excellent low-calorie food, with only 19 calories per cup of raw squash. This dish is great on its own as a side dish, but it can also be incorporated into many other recipes.

Provided by Martha Rose Shulman

Time 20m

Yield Serves 6 to 8

Number Of Ingredients 7

2 tablespoons extra virgin olive oil
1/2 medium onion, chopped (about 1 cup chopped)

1 small red pepper, cut in 1/4-inch dice
Salt and freshly ground pepper
2 tablespoons chopped fresh parsley
