4 tablespoon extra-virgin olive oil (EVOO)
divided
1 1/2 pounds flank steak
3 tablespoons steak seasoning
1 tablespoon Dijon mustard
2 tablespoons Worcestershire sauce
2 teaspoons hot sauce
4 large yellow onions
thinly sliced
2 large red bell peppers
thinly sliced
3 cloves garlic
chopped
1 tablespoon flour
1 1/2 cups beef stock
Salt and freshly ground black pepper
12 slices provolone cheese
1 large round loaf of crusty bread

Steps:

  • Preheat indoor or out door grill to high and oven to 375F
  • Heat a medium skillet over medium heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Add onions and season with some salt and pepper
  • Cook, stirring occasionally, for 7-8 minutes
  • Add the peppers, garlic, mustard, Worcestershire and hot sauce
  • Continue to cook until peppers are soft and onions are caramel in color, about 5 minutes
  • Add the flour and cook for 1 minute, then add the beef stock and simmer until nice and thick
  • Season the steak with some EVOO and steak seasoning
  • Transfer the steak to the grill and cook about 5-6 minutes on each side for medium rare
  • Remove and allow to rest 2-3 minutes
  • Meanwhile, cut the loaf of bread in half lengthwise
  • Scoop out some of the bread on the inside and toast in the oven or toaster oven
  • Thinly slice the rested flank steak against the grain and add it to the onion and peppers
  • Mix to combine
  • Open the toasted bread loaf and layer the provolone on both sides

3 large roasting/field red peppers
About 5 tablespoons extra-virgin olive oil (EVOO)
Salt and pepper
Fresh thyme
chopped (about 2 tablespoons)
2 large onions
chopped or quartered and thinly sliced
4 cloves garlic
chopped or sliced
6 pieces boneless
skinless chicken breast
1 teaspoon each dried oregano
dried thyme
granulated garlic
granulated onion and red pepper flakes
Deli-sliced provolone and mozzarella
halved (about ½ pound each)
6 Philly or soft Italian sub rolls
split
Drained and chopped giardiniera (Italian hot pickled vegetable salad) or sliced hot pickled cherry peppers

Steps:

  • Roast peppers over an open flame or under a preheated broiler to blacken skins
  • Place in a bowl and cover to cool, then peel and seed
  • Thinly slice peppers lengthwise
  • Dress with some EVOO, salt, pepper and fresh thyme
  • To a skillet over medium-low to medium heat, add olive oil, 2 turns of the pan
  • Add onions, season with salt and pepper, and cook to soften, about 15 minutes
  • Add garlic, cook 10 minutes more, then add ½ cup water and cook until absorbed

2 large yellow skinned onions, sliced very thin
Coarse salt and pepper or steak seasoning blend
2 teaspoons extra-virgin olive oil, 2 drizzles
1 1/2 pounds lean beef tenderloin or sirloin, ask butcher to slice the meat very thin
1 teaspoon garlic salt
Freshly ground black pepper
8 slices provolone cheese, from the deli counter
4 soft Italian sandwich hogie rolls, split 6 to 8 inches long each, split lengthwise

Steps:

  • Heat a medium saucepan over medium high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan. Add onions and season with salt and pepper or steak seasoning blend. Cook onions, stirring occasionally, 10 minutes or until onions are soft and caramel in color.
  • Heat a heavy griddle pan over medium high to high heat. Wipe griddle with a drizzle of oil using a paper towel. Sear and cook thin sliced steaks until brown but not crisp, about 2 minutes on each side. When the steaks are browned, just before you remove them from heat, sprinkle them with garlic salt and pepper. 1 bag frozen garlic and herb or steak fries, Ore-Ida Steak Fries preferred brand
OR 4 Italian rolls
8 portobello mushroom caps
5 tablespoons butter
2 large onions
6 large cloves garlic
Salt
Ground white pepper and black pepper
1 large bay leaf
2 tablespoons thyme
1/2 cup dry sherry, Marsala or white wine
2 tablespoons Worcestershire or vegetarian Worcestershire
1 tablespoon tamari, shoyu or soy sauce
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
4 to 5-ounce chunk provolone cheese
1 sack (2 cups) shredded yellow or white cheddar cheese
Giardiniera, drained and chopped and/or Italian hot cherry pepper rings, for serving

Steps:

  • Preheat oven to 450 degrees F.
  • Gather your ingredients.
  • For the fries: Line a baking sheet with fries and bake 25 minutes to very crispy.
  • Stem and gill (scrape underside of caps with teaspoon) the mushrooms and wipe with damp towel to remove grit. Thinly slice the mushrooms. Melt 3 tablespoons of butter in large skillet over medium-high heat and when it foams add the mushrooms. Brown well until meaty in fragrance and well browned.
  • Halve, peel and thinly slice onions and peel garlic. In a second large skillet over medium heat, melt 2 tablespoons butter then add the onions and season with salt, white pepper and bay leaf. Cook until tender, 8 to 10 minutes, stirring occasionally. Turn the heat up to medium-high to high, add about 3/4 cup water and let it absorb completely. Then lower heat to low and remove bay leaf.
  • While onions cook, grate or chop the garlic. Add to mushrooms along with thyme, salt, black pepper, sherry, Marsala or wine, Worcestershire and soy sauce. Reduce heat to low.
  • For the cheese sauce: In a sauce pot, melt butter over medium-high heat. Whisk in flour, add milk and while it thickens grate provolone. Add it and the cheddar in small handfuls to sauce.
  • Top the fries with mushrooms, sweet, soft onions, cheese sauce, chopped giardiniera and/or cherry pepper rings and serve. OR layer slices of provolone on a roll with mushrooms, onions and chopped giardiniera.

1 lb ground sirloin
1 softball-sized onion, chopped
1/4 cup steak sauce
1 cup beef stock
salt

4 dinner rolls
1 tablespoon butter

1 cup milk
1 cup provolone cheese, shredded
8 ounces salami, chopped
4 ounces provolone cheese, chopped
8 ounces pepperoncini peppers
1 head bibb lettuce
1 bunch arugula
2 tablespoons extra virgin olive oil
1 tablespoon red wine vinegar

  • Preheat broiler.
