- Combine cornmeal mix, egg and oil in bowl; mix well.
- Spoon over casserole.
- Bake at 350 degrees or until topping is brown.

My facebook friend Susan from TN gave me this recipe and I make it often. I have never really measured the chili powder as that is a matter of taste so add more to less to suit your palate.

- 1. In a large skillet, brown the ground beef, adding the peppers and onions. When done, drain, and return to skillet. Stir in the corn, tomatoes, sour cream, and chili powder. In another bowl prepare the cornbread mix following directions on the package.
- 2. Pour beef mixture into a 9 x 13 inch baking dish. Spoon cornbread batter evenly over the top. Evenly spread the cheddar cheese over the batter and bake following the directions on the cornbread mix until cornbread is done and top is lightly brown.
Tips:
- To create a flaky crust, use cold butter and work it into the flour quickly. Avoid overworking the dough, as this can toughen it.
- When filling the pie, leave some space at the top so that the filling doesn't bubble over during baking.
