This is a pizza I put together yesterday for my family. Great way for me to get my kids to eat veggies. I used Sue L's Recipe #104173 and our Recipe #252423 for the crust. I also used only some of these veggies, because of what I had on hand but posted it the way I plan to add to it next time. ;) Feel free to use whatever colorful veggies you have on hand also! Preparation and cooking time includes time to make Recipe #252423 for the pizza.

2 medium prepared pizza crust, I used Healthy Italian Breadsticks or Pizza Crust
15 ounces pizza sauce, I used Pizza Sauce
3 cups mozzarella cheese
1 -2 zucchini, cut into 1/8-inch rounds
1/2 cup yellow tomatoes, sliced
1/2 cup tomatoes, sliced (cherry tomatoes would be nice!)
1 yellow squash, cut into 1/8-inch rounds
1/2 cup red onion, sliced
1/2 small orange bell pepper, diced
red pepper flakes (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • If using Recipe #252423 for the crust, wait until the crusts have baked for 20 minutes and then add and arrange all of the toppings (if using a different pizza crust, then follow the directions for that pizza crust).
  • Spread sauce over pizza dough. Sprinkle cheese all over sauce. Arrange zucchini, tomatoes, and yellow squash over pizza. Scatter onion and bell pepper over vegetables. Sprinkle with red pepper flakes, if desired, and season with salt and pepper.
  • Put the pizza back in the oven to cook for about 10 more minutes.

2 tablespoons chopped red onions

1 ready-made pizza dough
2 teaspoons olive oil
8 ounces pizza sauce
6 ounces shredded mozzarella cheese
5 tablespoons sweet corn

Steps:

  • Slice all the vegetables into small, bite-sized pieces.
  • Thaw out, then roll out the pizza dough on a pizza pan.
  • Spread olive oil on top.
  • Spread pizza sauce.
  • Sprinkle mozzarella cheese.
  • Place all the vegeatables on top; if you want a rainbow effect then start in the middle and make concentric circles with each color.
  • Drizzle olive oil on top.
  • Bake at 400F for 20-25mins.
  • Slice and serve.

3/4 cup grated Parmesan cheese
1 1/2 tsps oregano leaves
1 pound (16 oz) refrigerated pizza dough
1 tbsp plus 2 1/2 teaspoons extra-virgin olive oil
2 cups shredded Mozzarella cheese
1/2 tsp salt divided
1/2 cup halved grape tomatoes
1/2 cup chopped orange bell pepper
1/2 cup chopped yellow bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped red onion

Steps:

  • Preheat oven to 425°F. Mix Parmesan and oregano in a small bowl; set aside. Roll out pizza dough on lightly floured surface, shaping into an oval about 10x16-inches. Transfer dough to large baking pan sprayed with no stick cooking spray. Brush dough with 1 tablespoon of the olive oil. Sprinkle half of the Parmesan mixture evenly over dough. Top with shredded mozzarella, leaving a 1-inch border for the crust.
  • Toss tomatoes with 1/2 teaspoon of the remaining olive oil and a pinch of the salt in small bowl. Arrange tomatoes along crust, working down long side of the pizza to resemble the red stripe of a rainbow. Repeat with remaining veggies, olive oil and salt, creating stripes for each color in the following order: orange peppers, yellow peppers, green peppers and finishing with red onion. Sprinkle with remaining 1/4 cup Parmesan mixture.
  • Bake 20 to 25 minutes or until cheese is melted and crust is lightly browned. Cool 5 minutes before slicing and serving.

1/2 cup purple potatoes, cut into 1-inch dice
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 cup small (1-inch) broccoli florets
One 12-inch parbaked prepared pizza crust
1 cup ricotta cheese
3/4 cup shredded mozzarella
2 tablespoons grated Parmesan
14 pepperoni slices
1/3 orange bell pepper, cut into 1/2-inch dice
1/2 cup thinly sliced yellow squash

Steps:

  • Preheat the oven to 400 degrees F.
  • Toss the potatoes with 1 tablespoon of the oil, sprinkle with salt and pepper, and then spread out on one half of a baking sheet. Roast for 10 minutes.   • In a medium bowl, stir together the ricotta, mozzarella and Parmesan, and season with a pinch of salt and pepper. Spread the cheese mixture over the rainbow crust and the half-moons. Starting from the outside edge of the rainbow, fan out the pepperoni slices in a single line. Fan the diced bell pepper in an even line beneath the pepperoni. Then add lines of the squash, roasted broccoli and roasted potatoes.

1 tablespoon brown sugar
1 cup warm water
2 teaspoons active dry yeast
4 small beets, roasted, peeled, and pureed
3 tablespoons olive oil, divided
2 teaspoons kosher salt
4 cups all-purpose flour
your choice of toppings, enough for 1 pizza
1 ½ tablespoons olive oil
1 ½ cups pizza sauce
1 cup shredded mozzarella cheese
1 pt cherry tomato
1 orange bell pepper, diced
1 yellow bell pepper, diced
1 cup fresh spinach, chopped
1 cup purple sweet potato, diced and roasted
salt, to taste
