Number Of Ingredients 11

2 lbs ground beef
1 medium onion, small dice
diced tomato (2 - 14.5 oz cans)
tomato sauce (1 - 14.5 oz can)
pinto beans, drained (1 - 14.5 oz can)
1 (12 ounce) bottle beer
2 tablespoons chili powder
1 teaspoon garlic powder
1/2 teaspoon cumin
2 teaspoons salt
2 tablespoons olive oil

Steps:

  • Saute onion in olive oil until translucent. Add to slow cooker, along with tomatoes and beans.
  • Brown beef in same pan, adding a little salt to season.
  • Drain beef and add to slow cooker. Add a little beer to the pan to deglaze and get all the good crispy bits. Pour into slow cooker and add rest of the beer.
  • Stir in seasonings and cook.
  • An hour before serving, taste and adjust seasoning as desired. Add a little flour if it is too thin.

Tips:

  • Use a flavorful base: A combination of ground beef, pork, and Italian sausage provides a rich and complex flavor base for the chili. You can also use a combination of ground turkey or chicken for a leaner option.
  • Sauté the vegetables: Sautéing the onions, bell peppers, and garlic in olive oil enhances their flavor and adds depth to the chili.
  • Use a variety of beans: A combination of kidney beans, black beans, and pinto beans adds texture, color, and protein to the chili.
  • Add diced tomatoes and tomato sauce: These ingredients provide a rich tomato flavor and help to thicken the chili.
  • Season generously: Use a combination of chili powder, cumin, oregano, and paprika to season the chili. You can also add a touch of cayenne pepper for a bit of heat.
  • Simmer for at least 30 minutes: This allows the flavors to meld and develop. The longer you simmer the chili, the better it will taste.
  • Serve with your favorite toppings: Shredded cheese, sour cream, diced avocado, and chopped cilantro are all classic toppings for chili.
