1 large onion, chopped

2 cups corn bread stuffing mix

2 tablespoons prepared mustard
1/2 cup honey
2 tablespoons orange juice concentrate
RAISIN SAUCE:
1/2 cup packed brown sugar
2 tablespoons all-purpose flour

1/4 cup cider vinegar

  • Using a sharp thin-bladed knife and beginning at one end of the ham, carefully cut a 2-1/2-in. circle about 6 in. deep; remove cutout. 1 (7- to 8-lb) fully cooked bone-in shank-end ham
6 cups water
1/4 cup pure maple syrup
1 cup granulated maple sugar*
1 teaspoon dry mustard
1/4 cup apple juice
1/4 teaspoon ground cloves (or 10 cloves stuck into ham)
2 cups raisins (10 oz)

Steps:

  • Put ham cut side down in a large deep heavy pot (about 10 quarts) and add water and syrup.
  • Bring liquid to a boil, then reduce heat to low and gently simmer ham, covered, until tender, 2 to 2 1/2 hours. Uncover and cool slightly.
  • Preheat oven to 350°F.
  • When ham is cool enough to handle, remove from pot, reserving cooking liquid, then cut off any rind and excess fat, leaving a thin layer. Transfer ham to a roasting pan.
  • Whisk together sugar, mustard, apple juice, and ground cloves, if using, in a bowl, then spoon over ham. 4 large thick center cut loin chops

1 Tbsp worcestershire sauce
1/4 tsp black pepper

1/2 cup molasses
2 eggs
2/3 cup boiling water
1 cup water
1/2-3/4 cup raisins
3/4 cup packed brown sugar
1 1/2 tablespoons cornstarch
1/2 teaspoon cinnamon
1/4 cup cider vinegar
1 tablespoon unsalted butter, softened

Steps:

  • For the cake: Mix the first 5 dry ingredients together and set aside.
  • Beat Crisco and sugar until well blended.
  • Add molasses and beat well.
  • Add eggs one at a time beating well between each one.
  • Add half of flour mixture and mix well.
  • Add 1/3 cup of boiling water and mix well.
  • Add the rest of the dry and mix well.
  • Add rest of boiling water and mix well.
  • Pour cake batter in a greased 8X8 baking pan and cook for 35-40 minutes in a 350 degree oven.
  • For the sauce: Add the warm water and raisins in small saucepan and simmer for 5 minutes.
  • Remove pan from heat.
  • In a larger saucepan add the brown sugar, cornstarch, cinnamon and vinegar and stir well.
  • Add the hot raisin mixture and stir well cooking over medium heat for 2-3 minutes as mixture thickens.
  • Remove from heat and stir in butter.
  • Pour over the cut squares of cake.
