I LOOOOVE this in the summer. One of my friend's moms gave this recipe to me about three years ago after I had it at his house. It's really great--especially if you just add the ramen RIGHT before serving it!

1/4 cup sesame seeds
1/3 cup sliced almonds
1 head cabbage, finely chopped (I've used bagged broccoli slaw you can find in some grocery stores in place of this ingredient)
6 green onions, sliced thin
2 (3 ounce) packages ramen noodles, original flavor
2/3 cup oil
2 tablespoons water
1/4 cup cider vinegar (I've used rice wine vinegar in place of this(just adjust sugar and salt to taste)
1 tablespoon sugar
salt and pepper

Steps:

  • Toast sesame seeds and almonds on a cookie sheet in oven until lightly toasted.
  • Watch carefully, they can burn quickly.
  • Mix cabbage and green onions in a large bowl.
  • Crush ramen noodles in the package.
  • Open and remove broth packets.
  • To make dressing, mix oil, water and vinegar in a jar with a tight lid.
  • Add sugar and 1 packet of broth.
  • Shake well.
  • Taste, and add more sugar, as well as salt and pepper.
  • Just before serving, add crushed noodles, almonds and sesame seeds to cabbage mixture.
  • Pour on dressing and toss well.
  • Serve immediately.

2 (3 ounce) packages ramen noodles (coarsley broken, save the flavor package for another recipe)
1 cup peanuts (coarsley chopped, can use more)
1 (16 ounce) package shredded coleslaw mix
6 -7 green onions, chopped
1 small red bell pepper (sseded and julienned)
salt and black pepper (optional and to taste)
mandarin orange segments (any amount to taste)
1/2 cup white sugar
1/2 cup vegetable oil
1/4 cup cider vinegar
1 tablespoon soy sauce

Steps:

  • Set oven to 350 degreesPlace the broken noodles and peanuts on a baking sheet and toast until golden brown; cool to room temperature.
  • In a bowl place the coleslaw, green onions, red bell pepper, toasted ramen noodles and peanuts; toss to combine.

I decided to search here to see if it could be used in a cole-slaw or salad but all I came with was a dozen variations of the same recipe that called for ramen noodle. I've had that at pot luck dinners and can't stand it. So here is what I came up with. DS#1 added the pecans -- he's got good taste for a 15yo, hasn't he?

1/2 head napa cabbage
2 stalks bok choy
1 stalk celery, thinly sliced
2 apples, diced (I recommend a crisp, sweet-tart variety such as Fuji or Gala)
1/2 cup pecans, coarsely broken
1/2 cup canola oil or 1/2 cup other light-flavored oil
1/4 cup balsamic vinegar
1 pinch celery seed
1/4 teaspoon fresh ginger, very finely minced
1/2 teaspoon prepared brown mustard
1/2 teaspoon salt (to taste)
2 (1 g) packets Splenda sugar substitute

Steps:

  • Wash all produce as necessary.
  • Divide your half-head of napa lengthwise into 3 or 4 sections and knife-shred crosswise to yield strips about 1.5 inches long by 1/4 inch wide.
  • Divide your bok choy stalks lengthwise into 1in sections if necessary and slice thinly. Knife shred the green leaves to match the napa.

1 (16 ounce) package prepared coleslaw mix
2 packages ramen noodles, seasoning packets reserved for dressing (I use 1 pkg. Oriental and 1 pkg. beef)
4 green onions, sliced
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon sesame seeds
2 tablespoons slivered almonds (optional)
1/2 cup oil
1/4 cup granulated sugar

2 packages seasoning mix from Ramen noodles
1/4 c olive oil
1/4 c sugar
1/3 c vinegar (I use Bragg's apple cider vinegar)
1 tsp Mrs. Dash
1 tsp garlic powder
Salad:
1 small handful kale (see directions)
1 small bag cole slaw mix or half a head of cabbage of choice
2 package Ramen noodles
1/4 c toasted almonds or cashews
1 small can mandarin oranges, not drained

Steps:

  • If you've never worked with Kale before, here's how to prepare it: first, cut down the length of the stem on either side to remove the stem. Roughly slice the wedges of kale and wash them. If you are using a bag of chopped kale, you may have to pick through it and cut off the stems before washing. They are tough to chew and not very tasty. Next, put the kale in a bowl and massage it, grabbing it and squeezing and rubbing it. You will see the kale go from dull to bright green and smell a grassy smell. This makes the kale more digestible. Some people will steam the kale for about 5 minutes rather than massage it, which is an option if you have arthritis. Set aside. Mix the dressing ingredients in a large bowl. Crush the Ramen noodles and add to dressing. Add in chopped cabbage and kale. Fold salad, wetting all ingredients and mixing thoroughly. Salad will appear a bit dry. Add mandarin oranges and nuts to salad. If I don't feel like toasting almonds or cashews, I throw in some from a can of nuts to taste. It adds healthy oils and protein to make the meal last. Fold salad gently to mix but not destroy oranges. Chill for a couple of hours to overnight. Enjoy! Salad is also great in a pita pocket or on top of a bed of lettuce.
