RAMSAY'S STICKY CHICKEN DRUMSTICKS

Ramsay's Sticky Chicken Drumsticks image

Watched Gordon Ramsay make these on Rachael Ray and they looked so good I had to try them - and they rocked! It's from his Healthy Appetite cookbook and they're a regular in my rotation - as soon as drumsticks are on sale, we have them for dinner! Great leftover - if there is any.

GORDON RAMSAY'S STICKY LEMON CHICKEN

Gordon Ramsay's Sticky Lemon Chicken image

I found this recipe on a youtube video of Gordon Ramsey making this on one of his British cooking shows. These turned out pretty good and the flavors are fantastic! You can watch the video if that would be helpful! In it, he used whole chicken legs/thighs still attached together. I only had Chicken legs and they turned out great! You could probably use the bone-in chicken thighs. This is very easy and the lemon aroma will make your home smell so heavenly!

SWEET-AND-STICKY GRILLED DRUMSTICKS

Sweet-and-Sticky Grilled Drumsticks image

The syrupy glaze on these barbecued drumsticks results in a tangy, caramelized coating. We slow-grilled the chicken over medium-low heat to prevent flare-ups from the dripping sauce. Green-Cabbage Coleslaw makes a crisp side dish.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Number Of Ingredients 8

1 1/2 cups dry red wine
1 cup plus 2 tablespoons packed dark-brown sugar
1/2 cup low-sodium soy sauce
2 tablespoons finely grated fresh ginger
1 garlic clove, minced
8 chicken drumsticks, skin on
Coarse salt
Green-Cabbage Coleslaw with Vinaigrette

Steps:

  • Bring wine, sugar, soy sauce, ginger, and garlic to a boil in a saucepan. Reduce heat, and simmer until mixture has thickened to the consistency of honey, 35 to 40 minutes. Let cool.
  • Using a sharp knife, make three diagonal slashes through the skin and flesh on both sides of each drumstick (this will help the flavors permeate the meat).
  • Preheat grill to medium-low. (If you are using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 7 seconds.) Place drumsticks on grill, and brush with sauce. Close cover, and grill 4 minutes. Flip chicken, and brush with sauce. Continue to cook, flipping and brushing with sauce every 4 to 5 minutes, until cooked through, about 20 minutes total. Season with salt. Serve with coleslaw.

Tips:

  • Prep the Chicken: Pat the chicken drumsticks dry before seasoning and cooking. This helps the skin crisp up and prevents the chicken from steaming.
  • Use a Good Quality Sticky Sauce: The sticky sauce is the star of the dish, so use a good quality sauce that you enjoy. You can make your own or use a store-bought sauce.
  • Don't Overcook the Chicken: Chicken drumsticks are best when cooked through but still juicy. Overcooking will dry them out.
  • Use a Meat Thermometer: To ensure that the chicken is cooked through, use a meat thermometer to check the internal temperature. The chicken is done when it reaches an internal temperature of 165°F (74°C).
  • Let the Chicken Rest: Once the chicken is cooked, let it rest for a few minutes before serving. This allows the juices to redistribute and makes the chicken more tender.

Conclusion:

Ramsay's sticky chicken drumsticks are a delicious and easy-to-make dish that is perfect for any occasion. With a few simple ingredients and a little bit of time, you can create a restaurant-quality meal at home. Serve the chicken drumsticks with your favorite sides, such as mashed potatoes, roasted vegetables, or rice.
